Chocolate Peppermint Freezer Fudge

It’s the day after thanksgiving and you know what that means?? I’m about to put peppermint in just about everything. I love chocolate peppermint so I make sure to get that combo in wherever I can – fudge being no exception! I grew up eating my moms “5 minute fudge” that was a super simple mixture with a majority of butter, chocolate, sugar, marshmallows and evaporated milk. It is DELICIOUS and I plan on making it this year (and maybe sharing with you if you want!), but if you are like me and want to eat dessert every day and not feel like you are becoming a piece of fudge yourself… this recipe is for you! I made a freezer fudge that is filled with nutrient dense ingredients and is paleo (without the candy cane top) – aka perfect for an everyday dessert.
You might be wondering why this is called freezer fudge. Well the reason is that it really only has the same consistency as fudge when its frozen! I love that for many reasons but mainly because you can make a batch, throw it in the freezer, and not have to worry about it going bad for months. And of course it would never last months but you get what I mean. If you haven’t decorated for Christmas (or whatever holiday you celebrate!) then today is the day! It’s time to turn on holiday music, bake, make some hot chocolate and watch Christmas movies – my favorite weekend. Enjoy!!

Chocolate Peppermint Freezer Fudge
Ingredients
- 1 cup pitted dates
- ½ cup cashew butter
- ½ cup almond flour
- ¼ cup cacao powder
- ¼ cup chocolate chips
- 1 tsp peppermint extract
- 2 tbsp water
- Pinch of sea salt
- 1 candy cane, crushed (optional)
Instructions
- Combine dates & cashew butter in a food processor and process until it forms a paste.
- Then add almond flour & cacao powder and blend until completely combined. Add in chocolate chips and peppermint extract and blend to combine.
- Add in water, 1 tablespoon at a time until the mixture can easily be formed into a ball and doesn’t stick to your hands. Press into a small pan (i used a 4 x 6 inch), or shape into that size on a cookie sheet.
- Sprinkle with sea salt and crushed candy cane and freeze for at least one hour, slice and enjoy cold!
Notes
- Store in the freezer!
While this wasn’t super easy to make (since I don’t have a great food processor) it was absolutely worth the effort and is delicious!

Would like to make this fudge but cannot get cashew butter. Can I use Vegan butter instead.
Peppermint is one of my favoutie flavours and would like to make the fudge for my daughter.

I would use another kind of peanut butter rather than vegan butter.
