What Makes This Recipe Great

The perfect savory and sweet flat bread to add to the weekly menu. This Pancetta, Shallot and Rosemary Flatbread is the second flatbread in this new series. The idea is to create not only great flatbreads to enjoy on your deck or patio this summer season, but also explore some wonderful flavor combos. I have also loved creating new and fun bites and when the summer hits we always start to invite more friends and family over to enjoy the sunset by the pool. Ingredient List

  • Flatbread
  • Fig jam
  • Mozzarella cheese– feel free to fresh grated or pre grated no wrong kind of cheese
  • Gorgonzola cheese
  • Pancetta
  • Shallot– same family as the onion but smaller
  • Rosemary– look around sometimes you can find rosemary plant on your evening walks

Step By Step

  1. Lay your flatbread out and spread generously with the jam sprinkle with mozzarella and gorgonzola and set aside.
  2. In a skillet cook chopped pancetta for a few minutes, then add the shallots and rosemary and cook down until browned and fragrant.
  3. Sprinkle the cooked pancetta, shallot and rosemary onto the top of the jam spread and cook on the grill for 5 minutes until cheese is melted. Enjoy!

  • Pancette and bacon may look similar but they are in fact different cuts, both from the belly but cured in different ways and with different spices.

  • You can truly make this flatbread with any base you would like. The jam, cheese, pancetta, shallot and rosemary make a wonderful combinations so you cannot go wrong with base to hold it.

Can I cook this in the oven?

  • Yes, this will cook wonderfully in the oven. 375 degrees for 10-12 minutes.

Pancetta, Shallots & Rosemary Flatbread

Savor our Pancetta, Shallots & Rosemary Flatbread! A flavorful, gourmet flatbread perfect for any meal or gathering.

Ingredients 

  • 1 naan flatbread
  • 3 tbsp fig jam
  • 1 ½ cups mozzarella cheese
  • cup gorgonzola cheese
  • cup pancetta
  • 1 shallot, sliced
  • 1 tbsp rosemary, chopped

Instructions 

  • Prepare flatbread: Spread fig jam over naan. Sprinkle with mozzarella and gorgonzola.
  • Cook toppings: Heat a cast iron pan or flat top grill to 400°F (medium-low). Cook pancetta for 2 minutes. Add shallots and cook for 3 more minutes, stirring. Add rosemary and cook until shallots caramelize and pancetta browns.
  • Top flatbread: Sprinkle pancetta mixture over the prepared flatbread.
  • Cook flatbread: Place on grill or flat top, cover, and cook for 5 minutes or until cheese melts.
