By: Kelsey

Ingredients

  • 1 cup pitted dates
  • ½ cup cashew butter
  • ½ cup almond flour
  • ¼ cup cacao powder
  • ¼ cup chocolate chips
  • 1 tsp peppermint extract
  • 2 tbsp water
  • Pinch of sea salt
  • 1 candy cane, crushed (optional)

Instructions

  • Combine dates & cashew butter in a food processor and process until it forms a paste.
  •  Then add almond flour & cacao powder and blend until completely combined. Add in chocolate chips and peppermint extract and blend to combine.
  • Add in water, 1 tablespoon at a time until the mixture can easily be formed into a ball and doesn’t stick to your hands. Press into a small pan (i used a 4 x 6 inch), or shape into that size on a cookie sheet.
  • Sprinkle with sea salt and crushed candy cane and freeze for at least one hour, slice and enjoy cold!

Notes

  • Store in the freezer!
