The summer is heating up and the kids are most likely starting camps, running around the yard and we are all trying our best to keep them out of the house and busy. This Raspberry Cashew Cheesecake Bar is the perfect summer treat to have on hand. Created with cashews instead of cream cheese, this dairy free dessert has two crunchy layers made of graham crackers and smooth filling with just the right amount of sweetness. We love soaked cashews for this recipe for its ability to create a smooth, creamy textured filling with simply ingredients. The fiber rich raspberries and white chocolate combination is the perfect pair for the graham crackers in this bar.
Recipe List
- Cashews– unsalted is best so you can control the overall salt of the dessert
- Lemon juice
- Coconut oil– make sure its melted
- Almond or Coconut Milk
- Maple syrup– pure maple syrup is best
- Raspberry– fresh or frozen will work
- Graham cracker sheets
- Mini white chocolate chips
Step By Step
- Take your soaked and drained cashews and add to a blender with lemon juice, coconut oil, milk and maple syrup and vanilla bean paste blend until smooth.
- In an 8 X 8 pan spread the graham crackers out and cover the entire pan.
- Pour half the blended cashew mixture onto the graham crackers, sprinkle with half the raspberries. Add another layer of graham crackers and pour the remainder of the cashew mixture on top. Sprinkle with the rest of the raspberries and mini white chocolate chips.
- Once assembled put in the freezer for at least an 8 hours before slicing. Enjoy

- If you don’t want to make bars you can build these in cupcake tins, just make sure you have a silicon or paper liner in the tin.

Raspberry Cashew Cheesecake Bars
Ingredients
- 3 cups cashews, soaked in hot water for 1-4 hours
- ⅓ cup lemon juice
- ½ cup coconut oil, melted
- ¾ cup almond milk, or coconut milk
- ¾ cup maple syrup
- 1 tsp vanilla bean paste*
- 1 ½ cups raspberries
- 9 graham cracker sheets, 18 squares
- ¼ cup mini white chocolate chips
Instructions
- Blend cashew mixture: Drain soaked cashews and blend with lemon juice, melted coconut oil, milk, maple syrup, and vanilla bean paste until smooth.
- Prepare pan: Line an 8×8 pan with parchment paper.
- First layer: Place 9 graham cracker squares on the bottom of the pan. Pour half of the cashew mixture over them and smooth it out. Sprinkle half of the raspberries on top.
- Second layer: Add another layer of 9 graham cracker squares. Pour the rest of the cashew mixture over this layer, then top with remaining raspberries and mini white chocolate chips.
- Freeze: Freeze the pan flat for at least 8 hours.
- Serve: Slice into 18 bars. Store in an airtight container in the freezer. Let bars sit at room temperature for 5 minutes before eating for best texture.
Notes
- If you don’t have vanilla bean paste, you can use vanilla extract.
