Cacao Tahini Freezer Fudge
Some things are just better cold. Obviously cocktails and ice cream. But energy balls and bites are soooo yummy cold! I haven’t made any energy ball recipes on my site but I made these Cinnamon Date Rolls which are basically the same thing. So in a fit of energy ball making lately, I craved something a bit different. Freezer fudge!! First of all I wanted to use tahini, and also didn’t want big chunks of nuts. So I thought almond flour would be perfect to thicken up the tahini. Then adding dates for sweetness and cacao for chocolate flavor, turned into this beautiful fudge!! It’s called freezer fudge because it is best left in the freezer and eaten right out of the freezer.

Who doesn’t love a cold & clean treat in the summer? I also sprinkled them with fleur de sel for big chunks of salty goodness. Snacks like these are GREAT to have in the freezer for when you are craving a treat. It satsifies the craving in a healthy and wholesome way. Cacao Tahini Freezer Fudge
Ingredients
- 1 cup pitted dates
- ½ cup tahini
- ½ cup almond flour
- ¼ cup cacao powder
- 2 tablespoons water
- Pinch of sea salt
Instructions
- Combine dates & tahini in food processor and process until it forms a paste. Then add almond flour & cacao powder and blend until completely combined. Add in water, 1 tablespoon at a time until the mixture can easily be formed into a ball and doesn’t stick to your hands. Press into a small pan (i used a 4 x 6 inch), or shape into that size on a cookie sheet. Sprinkle with sea salt and freeze for one hour, slice and enjoy cold!

How do you store it in the freezer so that it doesn’t harden as some days go by?
Once it is completely frozen you can transfer them to a Ziploc bag or Tupperware!

Unfortunately no! On Whole30, even if the ingredients are compliant you can’t have anything that resembles a dessert. Perfect for after though!
I tried and I really like the taste and so the fact that this receipe include tahini, much economical than other nuts butter.
