Paleo Peppermint Mocha
Facts to know about me: Every year I seem to start loving the Christmas season more and more, and I LOVE peppermint mochas. Holidays are a funny thing and go through waves in how much you like them. When you are a kid they are AWESOME!!! All the lights, treats, presents, OMG SO FUN. Then you get older and go off to college and get less presents because you are an adult now… but then you turn 21 and get to add bourbon to your egg nog! The next step is getting your own place and getting to decorate which is fun… until you are broke and realize you can only afford 3 pieces of decor from the target dollar section, and still and adult so not many presents for you! And now it is finally starting to get FUN again for us. We have a perfect little fake tree we got at Michaels black friday last year, tons of fun Wayfair decor all over, and now an adorable little baby we put in Christmas onesies and looks at the Christmas tree lights like they are shooting stars. I have a feeling this is going to be one of our best Decembers yet!
Then there is the other fact of my love for Peppermint Mochas. I have had many a Starbucks peppermint mocha in my day – regular, skinny, almond milk version, you name it. But what is in the almond milk peppermint mocha at Starbucks? Glad you asked –
Almondmilk [Filtered Water, Almonds, Sugar, Calcium Carbonate, Sunflower Lecithin, Sea Salt, Xanthan Gum, Guar Gum, Vitamin A Palmitate, Vitamin D2 (Ergocalciferol)], Mocha Sauce [Water, Sugar, Cocoa Processed With Alkali, Natural Flavor], Brewed Espresso, Peppermint Syrup [Sugar, Water, Natural Flavor, Sodium Benzoate, Citric Acid], Whipped Cream [Cream (Cream, Mono And Diglycerides, Carageenan), Vanilla Syrup (Sugar, Water, Natural Flavors, Potassium Sorbate, Citric Acid)], Dark Chocolate Curls [Sugar, Chocolate Mass (Processed With Alkali), Cocoa Butter, Soy Lecithin, Vanilla Extract].
Soooo I am going to opt to make them myself this year!! And now that we have a Nespresso, It is super easy! You can totally make this without an espresso maker and just brew some super strong coffee to use in place of it too. It’s just a few ingredients and 1-2 drops of peppermint essential oil, and remember- you must use a high quality essential oil if you are going to ingest!!
