Chai seeds are a great source of fiber and are an easy addition to baked goods and flax meal is a wonderful source of Omega-3 fatty acid just a few helpful ingredients that level up these muffins.  Oat flour, applesauce and maple syrup round this recipe out to make sure that tiny tots and adults alike will love them.

Ingredients

These protein packed Oatmeal Breakfast Muffins will please even the pickiest of eaters.
  • Old Fashioned Rolled Oats- these are different then quick oats
  • Oat Flour– you can always make your own by tossing oats in your high power blender
  • Flax Meal- make sure and refrigerate this after you open the bag
  • Chia Seeds
  • Baking Powder
  • Ground Cinnamon
  • Salt 
  • Applesauce- Unsweetened is best to control the sweetness of these muffins
  • Dairy Free Milk- any milk can work 
  • Maple Syrup
  • Egg
  • Vanilla Extract

Step By Step Instructions

  1. Mix all the dry ingredients into a large bowl.
  2. Add wet ingredients to the bowl and combine.
  3. Scoop into muffin tin and bake.

  • Apple Cinnamon- ½ cup finally chopped apples + 1 tsp cinnamon
  • Peanut Butter Chocolate Chip- 3Tbsp peanut butter + ¼ cup mini chocolate chips 
  • Lemon Poppyseed- 2 tsp lemon zest + 2 tsp Poppyseed

  • Yes, these can be baked cooled and then send to the freezer. Be sure and freeze on a baking sheet individually before saving in a ziplock bag.

Ingredients

Scale
  • 1 ½ cups Old Fashioned Rolled Oats
  • ¾ cup oat flour
  • 2 tablespoons flax meal (ground flax seeds)
  • 1 tablespoon chia seeds
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup applesauce
  • 3/4 cup dairy free milk
  • 1/4 cup maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350 degrees. Line a muffin pan with paper liners.
  • Combine all ingredients in a bowl and stir until well combined.
  • Scoop evenly into 12 muffin tins. 
  • Bake for 30 minutes.

Notes

  • Apple Cinnamon: Add ½ cup finely chopped apples + an additional 1 tsp cinnamon
  • Peanut Butter Chocolate Chip:  Add 3 tbsp peanut butter and ¼ cup mini chocolate chips
  • Lemon Poppyseed: Add 2 tsp lemon zest and 2 tsp poppyseeds

  1. These are delicious! I used almond flour instead of oat flour (what I had on hand) and they came out amazing. Loved the lemon poppyseed addition.

  4. Absolutely delicious and super healthy!  I made the apple cinnamon version…. and also added the peanut butter because I had to. Great for a quick grab breakfast on the way out the door! 






  5. This was so easy to make and saved me when I had to make a ‘nutritious snack’ for daycare. I need to make another batch because there weren’t enough for me! 






  6. Excellent and healthy with low amount of sugar.
    I didn’t have oat flour so used regular unbleached flour and I used regular milk.

    Will make these again!
