These Healthy Hummingbird Muffins are beyond delicious!  A simple almond flour based muffin is made INCREDIBLE by adding in banana, applesauce, pineapple, pecans and spices!  All of the moisture and texture added is so tasty and the best part of all, both of my kids loved and devoured these.  They are the perfect breakfast or snack for spring and a great way to expose kiddos to all of these fruits and nuts. I also added an extra optional step of a little honey syrup to brush on top when they come out of the oven for that honey bun sweetness that I love in a muffin.  You can also totally make this into a loaf cake and bake for longer, until cooked through!  If you make these I would love to hear what you think in the comments below!

Tips for making Healthy Hummingbird Muffins

Banana– The best way to mash bananas for these muffins or any loaf you make is to peal them and place them on a plate. Then with your fork squish the banana completely, this will ensure that the whole banana get mashed and you are not left with large chunks.

Applesauce– If you don’t have a jar of applesauce in your fridge but do have some toddlers running around the house, feel free to use any fruit or apple pouch you have in the cabinet. These are soo handy and come in great if you are in a pinch when you don’t have applesauce

Pineapple– For this recipe you will want to drain the pineapple, feel free to use any you have as long as they are smaller pieces just chop them up to get them the correct size.

Pecans– Pecans work best for this recipe but feel free to sub in almond or walnuts if that is all you have on hand.

Ingredients

Scale
  • 2 cups almond flour
  • ½ c arrowroot flour
  • 3/4 cup coconut sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cardamom
  • Pinch grated nutmeg
  • 1 egg
  • 1/4 cup applesauce
  • 1/2 cup mashed banana (about 1 large bananas)
  • ½ cups crushed pineapple, drained
  • 1 teaspoon pure vanilla extract
  • 1/2 cup pecans, chopped

Instructions

  • Preheat oven to 350 degrees.
  • Mix almond flour, arrowroot flour, coconut sugar, baking soda, cinnamon, salt and nutmeg.
  • Add egg, applesauce, mashed banana, pineapple, vanilla extract and pecans and stir to combine
  • Scoop into muffin tins and bake for 20-25 min or until a toothpick inserted comes out clean.

Notes

  • Optional:  Mix 1 tbsp honey with 1/2 tbsp hot water and brush honey syrup over muffins when they come out of the oven!
