Ingredient List
- Almond flour
- Arrowroot flour– cornstarch can be used as a substitute
- Coconut sugar
- Baking soda
- Cinnamon
- Salt
- Cardamom
- Nutmeg
- Egg
- Applesauce– don’t pass up these kids pouches if you find yourself with out applesauce
- Banana
- Pineapple Tidbits– be sure to drain the liquid before using the pineapple
- Vanilla Extract
- Pecan– if you don’t have pecans, feel free to use almonds or walnuts
Step By Step
- Preheat and Prep: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well.
- Combine Dry Ingredients: In a large bowl, whisk together the almond flour, arrowroot flour, coconut sugar, baking soda, cinnamon, salt, cardamom, and nutmeg.
- Combine Wet Ingredients: In a separate bowl, whisk together the egg, applesauce, mashed banana, drained crushed pineapple, and vanilla extract.
- Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Add Pecans: Fold in the chopped pecans.
- Fill Muffin Cups: Fill each muffin cup about ¾ full.
- Bake: Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

- Add Coconut Flakes: Sprinkle shredded coconut on top of the muffins before baking for extra texture and flavor.

Ingredients
- 2 cups almond flour
- ½ c arrowroot flour
- ¾ cup coconut sugar
- ½ teaspoon baking soda
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ¼ teaspoon ground cardamom
- Pinch grated nutmeg
- 1 egg
- ¼ cup applesauce
- ½ cup mashed banana, about 1 large bananas
- ½ cups crushed pineapple, drained
- 1 teaspoon pure vanilla extract
- ½ cup pecans, chopped
Instructions
- Preheat oven to 350 degrees.
- Mix almond flour, arrowroot flour, coconut sugar, baking soda, cinnamon, salt and nutmeg.
- Add egg, applesauce, mashed banana, pineapple, vanilla extract and pecans and stir to combine
- Scoop into muffin tins and bake for 20-25 min or until a toothpick inserted comes out clean.
Notes
- Optional: Mix 1 tbsp honey with 1/2 tbsp hot water and brush honey syrup over muffins when they come out of the oven!
These are delicious! Very flavorful and great ingredients. They didnโt last long. So good!
