Ingredient List

  • Almond flour
  • Arrowroot flour– cornstarch can be used as a substitute
  • Coconut sugar
  • Baking soda
  • Cinnamon
  • Salt
  • Cardamom
  • Nutmeg
  • Egg
  • Applesauce– don’t pass up these kids pouches if you find yourself with out applesauce
  • Banana
  • Pineapple Tidbits– be sure to drain the liquid before using the pineapple
  • Vanilla Extract
  • Pecan– if you don’t have pecans, feel free to use almonds or walnuts

Step By Step

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well.
  2. Combine Dry Ingredients: In a large bowl, whisk together the almond flour, arrowroot flour, coconut sugar, baking soda, cinnamon, salt, cardamom, and nutmeg.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the egg, applesauce, mashed banana, drained crushed pineapple, and vanilla extract.
  4. Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Add Pecans: Fold in the chopped pecans.
  6. Fill Muffin Cups: Fill each muffin cup about ¾ full.
  7. Bake: Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool: Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

Healthy Hummingbird Muffins

These Healthy Hummingbird Muffins are gluten free, dairy free and packed with applesauce, banana, pineapple, pecans and spices!
Servings: 12

Ingredients 

  • 2 cups almond flour
  • ½ c arrowroot flour
  • ¾ cup coconut sugar
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ¼ teaspoon ground cardamom
  • Pinch grated nutmeg
  • 1 egg
  • ¼ cup applesauce
  • ½ cup mashed banana, about 1 large bananas
  • ½ cups crushed pineapple, drained
  • 1 teaspoon pure vanilla extract
  • ½ cup pecans, chopped

Instructions 

  • Preheat oven to 350 degrees.
  • Mix almond flour, arrowroot flour, coconut sugar, baking soda, cinnamon, salt and nutmeg.
  • Add egg, applesauce, mashed banana, pineapple, vanilla extract and pecans and stir to combine
  • Scoop into muffin tins and bake for 20-25 min or until a toothpick inserted comes out clean.

Notes

  • Optional:  Mix 1 tbsp honey with 1/2 tbsp hot water and brush honey syrup over muffins when they come out of the oven!

    Just made these and one they r so delicious warm! Canโ€™t wait to try them when their fully cooked to. I didnโ€™t have a fresh banana so I used a frozen unthaw and it worked.
