What Makes This Recipe Great

If you could not tell, I’m fully invested in the new plan to add extra protein to most meals. Cottage cheese has been my go to because once you blend in it a high powder blender with other ingredients such as lemon, capers and garlic you are left with a smooth dressing and extra protein. The addition of capers to this recipe brings salty and acidic undertones to the dressing along with the lemon and dill. I love the freshness of this Lemon Herb Macaroni Salad and with the addition of chicken it becomes a protein packed lunch for any day of the week.

Step By Step Instructions

  1. In a blender combine cottage cheese, milk, mayo, lemon juice, lemon zest & garlic powder and blend until smooth. Also cook your macaroni and allow to cool while you are preparing the rest of the recipe.
  2. In a large bowl combine cooked macaroni, chicken, dill, parsley, celery, green onion & capers.
  3.  Pour the cottage cheese mixture on top and toss it all together to combine. Enjoy!

  • You will want to make sure the macaroni noodles are cooled before you add the cottage cheese mixture, this will just make sure it combines nicely.

High Protein Lemon Herb Macaroni Salad

Ingredients 

  • 12 oz. macaroni
  • 1 ¼ cup cottage cheese
  • ¼ cup milk
  • ¼ cup mayonnaise
  • 2 tbsp lemon juice
  • 2 tsp lemon zest
  • 1 tsp garlic powder
  • 1 lb. chicken, cooked and chopped
  • 2 tsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped
  • ½ cup celery, chopped
  • ¼ cup green onion, chopped
  • ¼ cup capers

Instructions 

  • Cook your macaroni according to package directions then let cool slightly.
  • In a blender combine cottage cheese, milk, mayo, lemon juice, lemon zest & garlic powder and blend until smooth.

    Made this last night and it is flippin’ DELICIOUS! I used Barilla Protein Pasta to bump up the protein even more. The Barilla protein pasta tastes exactly like regular pasta. Other than that, I would not change a thing. The balance of flavor is perfect! Thanks for another great recipe.
