- Coconut Oil– be sure and use refined coconut oil so you don’t have an
- Milk– any milk you like will work for this recipe
- Lemon Extract– Add lemon zest to the batter for even more lemon flavor
- Poppyseed– you can find poppyseeds in the baking aisle

- If you don’t have coconut oil, you can use melted butter or another neutral oil

Can I use a different flour for these muffins?
- If you want to you use a different flour other then traditional white flour I suggest replacing it with 1 for 1 gluten free flour or whole wheat flour. Almond flour has a higher weight so that does not translate equally.

Lemon Poppyseed Protein Muffins
Ingredients
- 1 cup flour, all-purpose
- ½ cup vanilla protein powder
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup maple syrup
- 1 egg
- ¼ cup melted coconut oil
- ⅓ cup milk, any kind you like
- 1 tsp lemon extract
- 1 tablespoon poppyseed
Instructions
Get Ready to Bake:
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
Mix Everything Together:
- Put all the ingredients (flour, protein powder, baking powder, salt, maple syrup, egg, melted coconut oil, milk, vanilla extract, and poppy seeds) into a big bowl.
- Stir everything together until it’s all mixed well. Don’t overmix, just combine everything.
Fill the Muffin Pan:
- Spray a muffin pan with cooking spray (or use a silicone muffin pan, which is easy!).
- Fill each muffin cup about ¾ of the way full with the batter.
Bake the Muffins:
- For mini muffins: Bake for 10-12 minutes.
- For regular-sized muffins: Bake for about 20 minutes.
- To check if they’re done, stick a toothpick into the center of a muffin. If it comes out clean, they’re ready!
