High Protein Lemon Herb Macaroni Salad

Try our High Protein Lemon Herb Macaroni Salad! Refreshing, nutritious, and perfect for a healthy meal or side dish.

Ingredients 

  • 12 oz. macaroni
  • 1 ¼ cup cottage cheese
  • ¼ cup milk
  • ¼ cup mayonnaise
  • 2 tbsp lemon juice
  • 2 tsp lemon zest
  • 1 tsp garlic powder
  • 1 lb. chicken, cooked and chopped
  • 2 tsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped
  • ½ cup celery, chopped
  • ¼ cup green onion, chopped
  • ¼ cup capers

Instructions 

  • Cook your macaroni according to package directions then let cool slightly.
  • In a blender combine cottage cheese, milk, mayo, lemon juice, lemon zest & garlic powder and blend until smooth.
  • In a large bowl combine cooked macaroni, chicken, dill, parsley, celery, green onion & capers. Pour the cottage cheese mixture on top and toss it all together to combine.
  • Enjoy!
