  • Cotjia Cheese– my favorite part about cotjia cheese is that you can shave off as much as you like from the main round
  • Roasted Corn– you can sometime find frozen roasted corn a
  • Pico de Gallo– you can use your favorite salsa for this recipe
  • Guacamole
  • Greek Yogurt
  • Mayo
  • Ranch Seasoning– any packet of ranch seasoning will work
  • Chipotle Peppers– you can omit the peppers if you don’t love a spicey dressing
  • Lime Juice– be sure to roll those limes before you juice them
  • Salt– use at your own will

Step By Step

  1. In a large bowl add chopped romaine lettuce.
  2. Combine all dressing ingredients in a blender and blend until smooth.
  3. Pour dressing over lettuce and toss to combine.
  4. Top salad with grilled chicken, Cotija cheese, roasted corn, pico de gallo, and guacamole.

  • 2 heads of romaine lettuce, chopped
  • 3 chicken breasts, grilled
  • ½ cup Cotija cheese
  • 1 cup Roasted corn
  • 1 cup Pico de gallo
  • ½ cup Guacamole

Chipotle Ranch dressing

  • ¾ cup Greek yogurt
  • ¼ cup Mayonnaise
  • 1 packet Ranch seasoning
  • 2 chipotle peppers, from the can
  • Juice of 1 lime
  • Salt to taste

Instructions 

  • In a large bowl add chopped romaine lettuce.
