What Makes This Recipe Great
5th times a charm? It was for these Grain Free Double Chocolate Cookies! I honestly have never had to remake a recipe this many times. There have been many times I gave up on recipes after 2 or 3 times just because it wasn’t worth it, but I was determined to make these grain free cookies work!!! I LOVE double chocolate cookies and knew they needed to be a bit fudgey with a little crisp around the edges. Now these aren’t SUPER fudgey but they are are moist and have that little crisp! 2 of the rounds I tried were okay enough for me to still eat, but 2 of them I had to throw away because they just crumbled in your mouth – EW. The addition of a little nut butter is exactly what these needed and it made them perfect!
These Grain Free Double Chocolate Cookies are a healthy way to enjoy a decadent dessert! Packed with chocolate flavor and sweetened with coconut sugar! Also these cookies are gluten free which is great for birthday parties and other gatherings as the gluten free population is ever growing and we need to be prepared to accommodate more folks with gluten intolerance or Celiac Disease.
Ingredient Information
- Almond Flour
- Coconut Flour
- Coconut Sugar
- Ghee– butt can also work
- Nut Butter– which ever is your favorite nut butter
- Baking Soda– make sure its not baking powder, they are different
- Cocoa Powder– cacao powder can also work
- Salt
- Vanilla Extract
- Chocolate Chips
Step By Step
- Preheat oven to 400 degrees. In a medium bowl combine all ingredients except the chocolate chips and coarse sea salt.
- Once dough is combined, stir in chocolate chips just until they are evenly dispersed. Line a baking sheet with parchment paper and scoop into 10 balls.
- Flatten the balls on the sheet and make sure they are evenly spread apart. Top each cookie with 1-2 more chocolate chips and sprinkle with coarse sea salt.
- Bake for 8 minutes and let cool!

- 1 egg, slightly beaten
- 1 teaspoon vanilla extract
- ¼ cup ghee, melted and cooled
- 2 tablespoons nut butter, i used almond
- ½ cup coconut sugar
- ½ cup almond flour
- 1 tablespoon coconut flour
- ½ cup cacao powder
- ½ teaspoon baking soda
- Pinch of salt
- ¼ cup chocolate chips, or chopped chocolate
- Coarse sea salt, for sprinkling
Instructions

Sometimes I use coconut flakes for the chocolate cookies.
Can I use butter instead of ghee?
Yes you can!
Yum! So good and chocolatey! I did substitute 3 Cashew Cookie Lara Bars (ground up in food processor) for the coconut sugar since I’m doing Whole30 right now. It isn’t maybe quite as sweet but still delicious!
What is a vegan alternative for the ghee?
I am not sure! I don’t do much vegan baking!
Hi – these look so yummy – worth the 5 tries! Is there a substitute I can use for the coconut sugar? I don’t bake often and really don’t want to have it sitting in my pantry. thank you
Ooo I haven’t tried it with any other sugar!! I am sure it would be fine with a brown sugar but I don’t think something like honey or maple syrup would work. I will have to try it out!
Thank you for not giving up on this recipe! I keep making it over and over again because the cookies are just so darn delicious. I also have put the batter in a small baking dish and baked it like brownies…quite amazing. I do believe this is my fourth or fifth time making them! 😀

What else could be used instead of ghee other than butter?
You can use coconut oil! Just know it will taste a little coconutty unless you use refined coconut oil!

These are AMAZING with so many good ingredients. I used cacao nibs and some dark chocolate chips and added some maca powder cause ya know, #health. Will absolutely be making these again.

Great recipe. Made for guests where the family is on W30. Next time I would cut the cacao in half and leave out the pinch of salt from the dough. Quick, easy and perfect for the chocolate lovers!! I used Lilly’s brand chocolate chips. Do you have other suggestions?
