Raise your hand if you’re tired! This two kid thing is no joke and most days I get to dinner time and think okay whats the easiest possible thing I can make right now? Also it’s been 90 degrees all week so turning on the oven and stove is just not my favorite. Back to the grill! These Chicken Sausage, Broccoli & Potato Foil Packets are perfect for those busy & warm nights.

Chicken Sausage, Potato & Broccoli Foil Packet
Ingredients
- 4 chicken apple sausages, sliced
- ½ cup onion
- 3 cups chopped potatoes
- 4 cups broccoli florets
- 2 tbsp oil
- 1 tsp garlic powder
- ½ tsp ground fennel
- 1 tsp salt
Instructions
- In a large bowl add the sliced chicken apple sausage, diced potatoes, broccoli and salt and pepper. Add olive oil, garlic and fennel and toss until coated.
- Place four 18x12-inch pieces of heavy aluminum foil on counter. Place the chicken sausage & potato mixture in the center of the foil. Double fold top and ends of each piece of foil, leaving space for steam to gather.
- Place packets on the grill and cover. Grill or bake at 400 degrees for 15 minutes, then open them up a bit to let steam out and cook another 5 minutes or until broccoli and potatoes are cooked through. Carefully open packets and serve.
