Football Friday Series week two, we are back!

September has gotten off to a tremendous start with multiple days of football, Ruth loving school and all the fun activities and friends she is meeting and of course mornings that are crisp and begging for a warm cup of coffee. This week we are continuing on our new series of Football Foods to take along on all your weekend activities including football games, soccer tournaments, neighborhood gathering. Heck make it for yourself to have the most epic girl dinner around. The idea for Chicken Enchilada Dip came on one of those random ideas while thinking about a dip to make. We all love dips but sometime you want it to have more protein and can be something that is more filling than a regular salsa or typical ranch dip. The first idea is always Buffalo Chicken Dip, which is amazing and everyone loves but you don’t need to reinvent that piece of perfection. Next my mind went to “what’s a delicious dinner that has protein and a sauce that can be reinvented into a dip.” Well if you take enchiladas out of the tortillas you kinda have the perfect dip. So I did just that! Chopped up the insides ingredients of the enchilada up, added greek yogurt and BAM brand new dip to bring to all your parties. Next you will find the ingredients and realize how easy this recipe is going to be to make in the next 24-48 hours! This Chicken Enchilada Dip is a healthy and delicious dip for any occasion!

Ingredients for Chicken Enchilada Dip

This recipe is relatively simple with the ingredients being things you most likely have on hand or easy to pick up at the store on your way to the next event. Bell Peppers & Rotisserie Chicken– these are the main components for the dip, make sure to chop both up small enough so when it gets scooped up it’s easy to eat. Rotisserie chicken in the food processor or mixer is a great way to get it throughly shredded. Sauce– Greek yogurt, enchilada sauce, diced green chilies and lime make the tangy and delicious sauce for the dip. Feel free to use any greek yogurt percentage you like, there are no wrong answers when it comes to greek yogurt. Limes juice adds a nice acidity to the sauce to do along with the diced green chilies. This Chicken Enchilada Dip is a healthy and delicious dip for any occasion!


Ingredients

Scale
  • 2 bell peppers, finely chopped
  • 1 rotisserie chicken, finely shredded*
  • ½ cup greek yogurt
  • ½ cup enchilada sauce
  • 1 small (4 oz.) can diced green chiles
  • 1 tbsp lime juice
  • Salt to taste

Instructions

  • In a bowl combine finely chopped bell peppers, chicken, greek yogurt, enchilada sauce, green chiles and lime juice and stir to combine. Season to taste with salt.
  • Serve with tortilla chips, bell peppers and or carrots.

Notes

 *I like to chop/ shred the chicken in a food processor!
