Cherry Lime Energy Balls - a simple mix of dates, dried cherries, almonds and lime make for a perfect snack on the go!

Time for some ENERGY BALLS!!  When I was at the store pondering over what dried fruit to add to these balls, I saw a ton of dried cherries.  Then I thought hmmmm what can you add to cherry to mix it up?  Lime popped into my head because of one of my favorite La Croix flavors – Cherry Lime!  Anyone else obsessed with La Croix?!  I have tried just about every flavor and can’t decide on a favorite.  We did get a soda stream that I use on the reg, and now la croix is an extra special treat when I get them!

These Cherry Lime Energy Balls are perfect to throw in the freezer because it makes them nice and hard to chew through.  I store them in a big bag in the freezer and if I am heading out the door and a bit hungry I will grab one or two to go!  They are also perfect for that time between getting home from work and going to workout to give you that extra boost!  These are just made of dates, almonds, dried cherries, lime zest & juice.  OH and they are rolled in coconut!  I became obsessed with balls because of my faves Fit Foodie Finds and The Healthy Maven!  They love balls.  So now, I am addicted to these bad boys!  Trust me, you will make them and feel the same way!

Matt and I are leaving on Sunday for a California Coast road trip and will be gone for 7 days!! I am so ready for a nice long vacay and will need lots of good car snacks!  We are doing 2 days in San Luis Obispo, 2 days camping in Big Sur, and then 3 days in San Francisco visiting friends.  It will be so wonderful to take in the beautiful coastline and breath some SUPA FRESH air. I can’t wait to document it for you guys and share my travels!

Ingredients

Scale
  • 2 cups almonds
  • 1 cup dates
  • 1 cup dried cherries
  • zest of 1 lime
  • juice of half a lime
  • 1/4 tsp sea salt
  • 1/2 cup shredded coconut

Instructions

  1. Add nuts to food processor and pulse for about 30 seconds. Combine nuts with dates and dried cherries and process until all ingredients have broken down and are sticky.
  2. Add in lime zest and juice. Process until all ingredients come together to form 1 large ball. Roll into small balls and roll in shredded coconut to coat. Store in fridge or in the freezer!
