The time for these incredible energy truffles has come!! I have been teasing these on instagram for over a week and trust me it is well worth the wait.  Let’s start off with how this idea came about.  I rarely make the same recipe over and over again – besides a few weeknight meals I love like cauliflower fried rice and asian meatballs! It is rare that I always go back to the same recipe from someone else’s blog – and by someone else here I mean my friend Davida from The Healthy Maven! Her Blueberry Muffin Energy Balls are unreal and I can’t even count the amount of times I have made them.  Something about the sweet berry taste with the nuts and dates and a little citrus make me come back for more time and time again.

So last week I was at Trader Joe’s and saw their Freeze Dried Raspberries (which they totally sell on Amazon!!) and got them thinking I could throw them in some brownies or something later.  But I had also gotten all of the ingredients for Davida’s Blueberry Energy Balls… so when I saw the nuts, dates and raspberries on the counter together, my brain basically exploded.  I just knew I had to try a new version with the freeze dried raspberries instead of blueberries and orange zest and juice instead of lemon! And yes, they turned out even better than I could have imagined.  I now plan on using all of the freeze dried fruits in energy balls in an effort to exhaust all possible options to find my absolute favorite.  I am doing this for you people!! Haha just kidding let’s be real I am reaping the benefits.  But I really hope you make them and enjoy them with me!

Check out this ball stack.

Chocolate Dipped Raspberry Energy Truffles

  • 1 cup almonds
  • 1 cup cashews
  • 1 1/2 cups pitted dates
  • 1 1/2 cups freeze dried raspberries
  • 1 teaspoon vanilla extract
  • zest of 1 orange
  • 2 tablespoon fresh orange juice
  • pinch of salt
  • 1 cup of chopped dark chocolate
  • 1 tablespoon coconut oil

  1. Add the almond & cashews to a food processor and pulse until nuts are the size of peas. Add the remaining ingredients except for chocolate and coconut oil and process on high until it comes together to form a ball. If it is crumbly and not coming together add 1 tablespoon of water! Once the ball has formed, scoop the mixture out and roll into balls. Place the balls on a parchment paper lined cookie sheet and place in the refrigerator while you prep the chocolate.
  2. Place chocolate and coconut oil in a microwave safe bowl and microwave for 30 seconds, stir, then again for 30 seconds, until it is completely melted.
  3. Remove the balls from the fridge and dip each one in the chocolate then place back on the parchment paper. Then drizzle with remaining chocolate and place in the fridge to harden!
