What Makes This Recipe Great

I have promised you nothing delicious fall inspired recipes that are perfect for a potluck, quick get together or any time you need fun food to share with friends. This Port Soaked Fig and Pistachio Brie is the absolute perfect dip to bust out for any type of gathering, including gathering your family to the dinner table.

My love of Brie cheese truly has zero bounds and I will fight anyone who says they don’t “care for cheese”. I love this recipe because you have the sweet brie with the tartness of the port and figs and of course you have the crunch of the pistachios, the perfect trio.

Ingredient List

  • Brie– be sure and get a 9 or 15 inch Brie wheel
  • Dried Figs– you can usually find these in the produce section or by the dried fruit
  • Port– red wine can be a substitute
  • Honey
  • Pistachio

Step By Step

  1. Place a saucepan over high heat and add chopped, figs, port and honey to the pan. Bring to a boil and cook, stirring occasionally for 10 minutes then take off the heat and let rest.
  2. Score the brie: Using a serrated knife, make parallel cuts across the top rind, spacing them about ½ inch apart, and cutting just through rind but not through the cheese. Then, turn the brie 90 degrees and score perpendicular to your initial set of cuts, keeping the same ½ inch spacing.
  3. Place the scored brie in a small cast iron skillet or oven-safe serving dish.
  4. Bake for 12 to 15 minutes, until the cheese is soft and just starting to ooze out.
  5. Serve with crackers, bread and veggies. When serving, it’s important to remember that the skillet/baking dish will be hot.

Pro Tip

  • If you don’t have a cast iron skillet you can use any heavy skillet that you have or even a dutch oven.

  • 1 large, 12 to 16 oz round brie
  • ½ cup chopped dried figs
