Welcome to Holiday Cookie Week 2022.
This week you will have a new cookie recipe everyday! Get ready for a week full of sweets get your mixer plugged in, your pantry stocked with the essentials and your best apron on.
This recipe came partially from my memory and the partially from a childhood cookbook. I found the Cookie Cookbook at a local thrift shop and the memories came flooding back to me. The photos in the cookie cookbook reminded me of all the time we spent in the kitchen helping my mom especially during the holidays. I made a few changes to the recipe to make it gluten free and using coconut sugar versus white sugar.
My mom was the ultimate Christmas Elf back in the day, making loads of Christmas cookie boxes to deliver to neighbors, teachers, friends and family. We always got to help decorate the sugar cookies and gingerbread men, mom’s signature was red hots for the gingerbread men!
Mom’s boxes usually consisted of mint fudge, Sherry Cake, gingerbread men, sugar cookies, a delicious Health Bar cookie and sometime meringue. We always looked forward to helping in the kitchen on these days because you know we all ended up with soo may bites by the end of the day.
Do I have to use quick oats?
You do not need to use quick oats, but if you use regular oats be sure to blitz them for for a few minutes to break the up, this will make them easier to blend with the rest of the ingredients.
What if I don’t have trail mix?
Feel free to use anything similar that you have on had. Nuts, sunflower seeds, mini chocolate chips, m & m’s, raisins or anything else you would love in your cookies.

Peanut Butter Trail Mix Cookies
Ingredients
- 2 cup quick oats
- ½ cup coconut sugar
- ½ cup butter, melted
- ½ cup peanut butter*
- 1 ½ tsp vanilla extract
- 1 cup almond flour
- 1 ½ tsp baking powder
- ½ tsp salt
- ½ cup mashed banana
- 1 cup trail mix, or chocolate chips or m&ms
Instructions
- Heat oven to 350F.
- In a large mixing bowl add coconut sugar, butter, peanut butter and vanilla beat until completely mixed.
- Next add oats, almond flour, baking powder, salt combine. Add mashed banana and trail mix and fold to combine.
- Scoop into 1 inch balls and press down to slightly flatten (they won’t spread much).
- Bake for 8- 10 min or until browned around the edges.
Notes
- *any nut butter works!
Sooooooo easy and soooooo good!!!! Saw these on your insta and thankfully had all the ingredients! Didn’t have a full cup of trail mix so filled the rest with mini chocolate chips and dried cranberries! 5 stars!!!!!

Can I use coconut flour or oat flour instead of almond? I ran out of almond flour of whole wheat flour?
Yes you can!
Can you swap almond flour for regular? We have an almond allergy. Will the consistency be the same?
Do the same amount of flour as almond and arrowroot flour and it should be good.
