Peanut Butter Trail Mix Cookies

These Peanut Butter Trail Mix Cookies are a delicious cookie packed with oats and chocolate!

Ingredients 

  • 2 cup quick oats
  • ½ cup coconut sugar
  • ½ cup butter, melted
  • ½ cup peanut butter*
  • 1 ½ tsp vanilla extract
  • 1 cup almond flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ½ cup mashed banana
  • 1 cup trail mix, or chocolate chips or m&ms

Instructions 

  • Heat oven to 350F. 
  • In a large mixing bowl add coconut sugar, butter, peanut butter and vanilla beat until completely mixed. 
  • Next add oats, almond flour, baking powder, salt combine. Add mashed banana and trail mix and fold to combine. 
  • Scoop into 1 inch balls and press down to slightly flatten (they won’t spread much).
  • Bake for 8- 10 min or until browned around the edges.

Notes

  • *any nut butter works!
