These dairy free garlic mashed potatoes have been in my repertoire for awhile now and it just occurred to me recently that they were not on my website! The blasphemy I know. I am a firm believer that mashed potatoes are not just a holiday side dish, but something that should be enjoyed year round with lots of type of dishes! You roast potatoes all the time right? Why not mash them into creamy comfort goodness? I love serving my Instant Pot Creamy Dijon Chicken over these potatoes – and basically any meat that has a delicious sauce. You can choose your own destiny with this recipe too and choose to either keep the peels on or take them off, mash them with a potato mashed for some chunks or blend it in a food processor or with an immersion blender for a totally smooth potato situation. If you are like me and have seen every episode of friends too many times, you know that people can be very particular about their potatoes!
I even serve mashed potatoes as a base in a delicious BBQ Chicken Pizza Bowl recipe that is in my cookbook. Just trust me, they never fail as a side dish!

Dairy Free Garlic Mashed Potatoes
Ingredients
- 6-7 yellow potatoes, chopped (peeled or unpeeled, whatever you like)
- ½ cup coconut milk
- ⅓ cup chicken broth
- 3 tbsp ghee
- 2 tsp garlic powder
- 2 tsp salt
Instructions
- Place the chopped potatoes in a large pot and pour enough water over them to cover potatoes by 1".
- Season with a large pinch of salt. Bring water to a boil over high heat, then reduce heat to medium high and cook until potatoes are for tender, about 10 minutes.
- Remove potatoes from the pot with a slotted spoon and place them in a large bowl. Add coconut milk, chicken broth, ghee, garlic powder and salt and either mash with a potato masher for chunkier mashed potatoes, or use an immersion blender or food processor to blend until smooth.
