Chicken Caesar Spaghetti Squash Bake

Guys I have great news – 2 things are BACK – me from New York and Creamy Caesar Dressing in your life. Did that make sense? I am sure the me being back from NY part is obvious but more importantly, Caesar dressing no longer needs to be feared. For years I stayed away from Caesar salads because they were packed with terrible ingredients like milk, canola oil, cheese, sugar and so much more. Just google “kraft caesar dressing ingredients” and you will understand. But my favorite people over at Tessemae’s have managed to create a completely clean Caesar dressing that will bring this gem back into your life! The stuff is so smooth and creamy and happens to also be Whole30 compliant which basically just means squeaky clean! Instead of mixing this into a salad I wanted to create a super simple and tasty weeknight spaghetti squash bake. The best part about caesar is the umami flavor – that savory flavor you can’t quite put your finger on. If you are looking to this dressing it is at most Whole Foods and being added to new stores all around the country all the time! Just look in the refrigerated section by produce! 🙂
I mixed the dressing with spaghetti squash, some kale and chicken, tossed it in a pyrex and baked until heated through. The best part about this is you can toss in any cooked chicken you have. Leftover chicken from the night before? YUP. Shredded up rotisserie? YUP. Pre-cooked chicken from Trader Joes? OH YEAH. Heck, you could really throw in any meat that is cooked already… I bet chicken apple sausage would be amazing.

Chicken Caesar Spaghetti Squash Bake
Ingredients
- 2 packed cups chopped kale, stems removed
- ¾ cup Tessemae’s Creamy Caesar Dressing
- 1 Spaghetti squash, cooked & strands removed
- 2 cups, cooked & shredded chicken
- salt & pepper to taste
Instructions
- Preheat oven to 350 degrees. In a large bowl mix together kale and Caesar dressing and massage together until kale wilts a bit, about 2 minutes. Add cooked spaghetti squash and chicken to the bowl and stir all together until well combined. Add salt and pepper to taste. Pour into an 8x8 pyrex dish and bake for 15 minutes or until heated through.
Is it weird that I’m afraid of spaghetti squash. I need that dressing in my lyfe ASAP.

They are sold in all Whole Foods but are being added to many stores around the country! My local Ralph’s carries them in the the refrigerated section near produce!
You can also order it online. Just type in Tessemaes creamy carder dressing. I ordered from them came well packaged and quick.

How do you cook the squash?
I like to stab it with a knife them microwave it for about 10 minutes or until soft! Then slice in half and scoop out the seeds before scrapping out the squash strands!

Any cooked chicken, you can shred a rotisserie chicken or baked chicken breasts!

I made this dish tonight for my husband and me. I didn’t have kale so I subbed in spinach (which I prefer anyway). It was so good and so filling! Easy recipe and I love that it was literally four ingredients. Although I think I might try adding more veggies next time. Maybe throw in some mushrooms and zucchini or asparagus?! Possibilities are endless! Your Instagram account is my favorite to follow right now! 🙂

Just made this tonight. So good! I used spinach because I do not like kale. I also added some tomatoes because I had them to use. This has changed my mind about spaghetti squash!

So I swapped out the dressing with my own homemade Caesar dressing, which means it’s probably not paleo anymore, and used spinach. Love how this can all be made in the same dish – except the chicken. Because why use a bowl? Also, I think my 2-year old liked it, but she fell asleep while eating, so I can’t tell.

This was so good!! I made it for myself because my husband doesn’t like kale or spaghetti squash. He tried a bite and wanted me to share! Next time I might try adding some tomatoes or bell peppers. Thanks for the great recipe!

Tried this today and added mushrooms! I used Diaya Dairy free and gluten free dressing and it was amazing!!!
