Busy mornings during the school year call for a quick protein packed muffin, these Banana Chocolate Chip Protein Muffin has all the components for a great start to the day. This Banana Chocolate Chip Protein Muffins recipe is easy to make, delicious and packed with added protein. Welp it’s official, we cannot continue without taking about my DEEP obsession with the mini muffin pan!! I have used it weekly and I just cannot be stopped. Not sure about other peoples littles but for some weird reason my kids are unable to finish a regular size muffin, but if you give them a few mini muffins they miraculously disappear. I’m not sure if it’s the size being soo small that it becomes like a tiny treat or if they are just different which makes it fun. Either way I’m just ecstatic that they will finish a few of these Banana Chocolate Chip Protein Muffins, and not leave a half eaten regular size muffin on the table. The best thing about these Banana Chocolate Chip Protein Muffins is that are made with simple clean ingredients you know and love. A banana, any milk your family likes, protein powder (we love Flav City in our house) flour of any kind, some mini chocolate chips. Simply yet effective way to get protein, carbs and some sweetness into the kiddos. As with most of the muffins and loaf recipes on the blog these can be interchangeable. What to make the Banana Chocolate Chip Protein Muffins into a loaf, no worries just pour into a load pan bake at 350 degrees for 40- 50 minutes. Check with a pick to make sure it’s baked all the way through, let it cool and slice when ready. On the flip side you can switch any loaf recipe into fun tiny muffins. 350 degrees for 12-15 minutes should be perfect. Banana Chocolate Chip Protein Muffins

This Banana Chocolate Chip Protein Muffins recipe is easy to make, delicious and packed with added protein.


Ingredients

Scale
  • 1 cup flour
  • 1/2 cup vanilla protein powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup maple syrup
  • 1 mashed banana
  • 1/4 cup melted refined coconut oil
  • 1/3 cup milk (any milk works)
  • 1 tbsp vanilla extract
  • 1/3 cup mini chocolate chips

Instructions

  • Preheat oven to 350 degrees. 
  • In a bowl combine all of the ingredients and stir to combine.
  • Spray a silicone muffin pan with oil and fill each cup about Âľ of the way. 
  • Bake mini muffins for 15-17 minutes and regular muffins for 25-30 minutes.

  1. I made these with chocolate peanut butter protein powder and white mini chocolate chips and it’s fantastic. Little one and husband gobbled them up! Only thing I hesitated on was the TBSP of Vanilla – was that a typo / should it be a TSP? Thanks!
