This Turkey Pot Pie Meatloaf is simple, has incredible flavor and is Whole30 compliant!

Meatloaf MONDAAYYYY!!! I’m really hoping you said that in an Oprah voice… if not, please go back and do so.  Thanks!  I am super pumped about this meatloaf because Pot Pie Flavors are my favorite. I’ve made Chicken Pot Pie Soup, Tuna Pot Pie, Chicken Pot Pie Casserole AND Chicken Pot Pie Twice Baked Potatoes…. so yeah you could say i’m into it.  So I thought it was about time to mix my favorite flavors with our go-to weeknight meat – ground turkey!  We use ground turkey all the time because we can get a couple at Trader Joe’s on a Sunday and can make everything from meatloaf to meatballs to burgers all week long.  What makes pot pie flavor you say?  I think the essentials are thyme, rosemary, carrots, potatoes and peas (except I use chopped green beans a lot to make it whole30 compliant!).

So add this too your meals for the week and let me know what you think! I am hoping your easy weeknight options feel endless with all of meatloaf goodness I’m throwing your way.  Speaking of Whole30, are you guys doing one? My sis and her hubby are and it’s reminding me how hard it is! If you are doing one  – PROPS.  I am very glad I decided not to do one however because this prego lady needs her bread more than ever.  Okay okay back to this meatloaf – hope you love it!

  • 1 egg
  • ¼ cup almond flour
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup chopped carrots
  • ½ cup chopped green beans
  • 1 cup peeled and chopped russet potatoes

My family and I loved this simple recipe. It did take much longer than 30 minutes to cook, closer to an hour – though that could have possibly been because I doubled up on the veggies.

This recipe was great! I was able to put it together quickly with ingredients that I already had in the kitchen. Ended up using frozen peas instead of green beans and it came out wonderful!

This is so delicious! I was hesitant when I made it the first time because there isn’t any sauce on top, but it is so moist I don’t think it needs one(my husband eats it with ketchup). It is packed with flavor from the thyme and rosemary; the veggie mix gets a little crispy in the oven and that’s for sure my favorite part!
I always double this so we have leftovers.
