Let’s use up those peaches people, if you grabbed a flat of peaches up from Costco like I did you for sure have a few lingering behind after you sliced some for the kids and made a quick peach cobbler. I love this chicken salad for its juiciness and protein packed goodness.

This Tarragon Peach Chicken Salad has some unsung hero’s in this recipe that bring extra flavor. With the addition of ground fennel along with garlic powder and dijon mustard which all bring layers of flavor to the chicken salad.

Unlike classic chicken salad recipes that are heavy on mayo and not much else this recipe has a little mayo, yogurt, dijon mustard and loads of flavor.

Ingredient List

  • Chicken Breast– rotisserie chicken also works in a pinch
  • Tarragon
  • Dairy Free Yogurt
  • Mayonnaise-Duke’s Mayo is the preferred brand
  • Dijion Mustard– the superior of all the mustards
  • Garlic Powder
  • Salt & Pepper
  • Ground Fennel
  • Peaches– make sure they are soft and ripe, you can keep the skin on
  • Roasted Pecans– a quick roast in the oven should be perfect

Step By Step

  1. In a large bowl combine all the liquid ingredients and spices including yogurt, mayonnaise, dijon mustard, tarragon, garlic powder, fennel, salt and pepper, mix well.
  2. Chop your cooked chicken, slice the peaches into bite size pieces and chop roasted pecans fold all into the yogurt mixture. Salt to taste and Enjoy.

Tarragon Peach Chicken Salad

Ingredients 

  • 2 pounds chicken breasts, chopped into 1 inch cubes
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon dried tarragon
  • ¼ cup dairy free yogurt, if you don’t have dairy free yogurt just add 2 more tablespoons of mayo + 1 tablespoon coconut or almond milk
  • 2 tablespoons mayonnaise
  • 1 tablespoon dijon mustard
  • 1 teaspoon tarragon
  • 1 teaspoon garlic powder
  • ½ teaspoon ground fennel
  • salt and pepper to taste
  • 1 large or 2 small peaches, chopped
  • ½ cup chopped roasted pecans

Instructions 

  • Preheat oven to 400 degrees.  Line a baking sheet with foil and place chopped chicken on top.  Sprinkle 1/2 teaspoon salt, 1/4 teaspoon pepper and 1 teaspoon tarragon on top of the chicken and toss to coat evenly.
  • Bake chicken for 13-15 minutes or until cooked through.
  • In a large bowl combine yogurt, mayonnaise, dijon mustard, remaining tarragon, garlic powder and ground fennel.  Add in chicken pieces and toss to coat.  Season with salt and pepper to taste.
  • Add in chopped peaches and pecans and toss to combine.
  • Serve in lettuce wraps, on sweet potato toast, or by the spoonful!
