- White Beans– cannellini or great northern beans work best)
- Chopped Strawberries– if you smell your strawberries and they smell like strawberries then they are ripe!
- Red Onion
- Pecans– Toss the chopped pecans in a dry skillet over medium heat for 2–3 minutes until they are fragrant. It adds a deep, smoky crunch
- Goat Cheese– substitute with feta if preferred
- Dijion Mustard– acts as an emulsifier and adds tang

Strawberry & White Bean Chopped Salad
Ingredients
Salad
- 2 large chicken breasts
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 head of romaine lettuce
- 1 cup white beans, rinsed
- 2 cups chopped strawberries
- ½ red onion, chopped
- ½ cup pecans, chopped
- ¼ cup crumbled goat cheese
Dressing:
- ¼ cup olive oil
- ¼ cup balsamic vinegar
- 1 tbsp dijon mustard
- 1 tbsp honey
- ½ tsp garlic powder
- Salt to taste
Instructions
- Place chicken breasts in a large zip lock bag and use a meat mallet to make them all an even width.
- Then add in 2 tbsp olive oil and 2 tbsp balsamic vinegar to the bag, zip it up and shake it around to coat the chicken. Let marinate for at least 30 minutes.
- Grill the chicken until cooked through (165 degrees inside) and set aside.
- Take your romaine, chop it thoroughly and add to a large bowl.
- Add in beans,strawberries, red onion, pecans and goat cheese.
- In a mason jar combine all of the dressing ingredients and shake to combine.
- Chop the chicken and add to the bowl along with the dressing. Toss to combine!
