I am the biggest chopped salad fan you’ll meet.  In my opinion, all salads should be chopped!  No more trying to get a huge piece of spring mix in your mouth and getting dressing all over your face.  I actually heard recently that eating chopped salads with a spoon is the move so I am definitely going to start doing that!  We had a BBQ a couple of weeks ago and I thought hmm I want to do like a wedge salad but I want it to be chopped (obviously). So I whipped this up and it was just the perfect mix with fresh crunch, creamy dressing, salty bacon and the balsamic glaze is pure perfection on top.  I made this a big batch salad because it’s great for gatherings but you can cut it in half easily as well.  I did a combo of iceberg and romaine lettuce but you can do one or the other if you want too!

Need to make some swaps?

Bacon– You can easily swap out regular bacon for Turkey bacon or  any bacon alternative.

Cherry Tomato– No worries if you don’t have cherry tomatoes feel free to chop up any tomato you have and us that.

Blue Cheese–  I used a blue cheese dressing for this, of course homemade or any type of blue cheese dressing you have will work great.

Balsamic Glaze– This is an additional fun topping, if you don’t love balsamic glaze just leave it off.

Chopped Wedge Salad

Servings: 12

Ingredients 

  • 1 large head of romaine lettuce
  • 1 head of iceberg lettuce
  • 8 slices of bacon, cooked
  • 2 cups chopped cherry tomatoes
  • ½ cup blue cheese dressing
  • Balsamic glaze, to top

Instructions 

  • Finely chop lettuce, removing the root.  Also remove the top couple inches of the romaine leaves.

  • Wash lettuce and add to a large bowl.
  • Chop cooked bacon and tomatoes.

  • Pour blue cheese dressing over the lettuce and toss to fully coat. 
  • Add in bacon and cherry tomatoes (reserving some to top) and toss again.
  • Pour into serving dish (if serving to guests) and top with remaining tomatoes and bacon then drizzle with balsamic glaze.

    Wedge salad is one of my favorites when we eat out. This is just so much easier to eat!
    We made it when the recipe was first published and I’ve thought about it many times since. 
    I can’t wait to be the cool kid at the next party I attend with this salad.

  2. This is such a great salad as is, but with warmer weather coming I’m always looking for meals to keep me out of the kitchen. I added a grilled, chopped chicken breast to amp up the protein so it could be a full meal. Just as delicious!
