What Makes This Recipe Great
Even though the days are getting shorter and the weather is changing, that does not mean you cannot continue to enjoy delicious and nutritious salads. Everyone knows and loves a classic Waldorf Salad with the grapes, and apples and candies walnuts, but my rendition of Chopped Kale Waldorf Salad brings the classics with some fun twists.
With the addition of the kale you get the added benefit of Vitamin A, fiber and antioxidants to help boost the leafy green count. With apples, grapes and celery this is the perfect salad to include the kids into, the sugar walnuts make a great impact also. You can meal prep this extremely easily to have a fresh salad each day. All you have to do it chop all the ingredients and leave off the chicken and dressing. Once you are ready to each add everything to a large bowl and toss with the homemade dressing and cheese. Last are the sugar walnuts to finish the creation.
Ingredient List

- Kale– be sure and remove the stems before chopping
- Olive Oil
- Balsamic Vinegar
- Dijion Mustard– make sure its dijon and not yellow mustard
- Garlic Powder
- Maple Syrup– pure natural maple syrup work best
- Black Pepper
- Salt
- Chicken– Rotisserie chicken is perfect for this salad
- Diced Apples– Gala, Honeycrisp or Fuji are preferred for this recipe
- Grapes– red grapes are preferred
- Celery
- Walnuts– store bought or homemade are great
- Gorgonzola Cheese
Step By Step
- Finely chop the kale and place it in a large bowl.
- In a jar or small bowl, mix olive oil, balsamic vinegar, Dijon mustard, garlic powder, maple syrup, pepper, and salt. Shake or whisk until well combined.
- Pour half of the dressing over the kale and massage it with clean hands until softened.
- Add the chicken, apple, grapes, and celery. Toss to combine.
- If needed, add more dressing to taste.
- Top with glazed walnuts and gorgonzola cheese. Enjoy!

Pro Tip
- Making your own glazed walnuts at home is extremely easy. You can toss walnuts and butter and sugar in a bowl and cook on the stove top or in the oven. Just be sure to watch the nuts while they cook, the cook and burn quickly.

Ingredients
- 1 head kale, destemmed & finely chopped
- ⅓ cup olive oil
- ¼ cup balsamic vinegar
- 1 tbsp Dijon mustard
- ½ tsp garlic powder
- 1 tsp maple syrup
- ¼ tsp black pepper
- ¼ tsp salt
- 3 cups chopped chicken
- 1 cup diced apple
- 1 cup chopped red grapes
- 1 cup diced celery
- ½ cup glazed walnuts
- ¼ cup crumbled gorgonzola cheese
Instructions

Really good recipe, but I would add two bunches of kale instead of one
