Slow Cooker Balsamic Taco Chicken

I’m going to take you back to the semi traumatic day that brought this new recipe to life. Remember last month when it was Milo’s birthday and Matt had to work, but then Mom came to the rescue and subbed in for the family day. Well during all the craziness of adapting some plans to still make the day enjoyable and fun for Milo we decided to have lunch at a new spot I had never been before, love testing out new restaurants.
The chicken had the classic taco flavors with the underlying balsamic tastiness that gave the chicken the perfect savoriness that kept me wanting more. Once we got home all I could think about was recreating the chicken to have over bowls (Yes, I’m back in my bowl ERA.)
I settled on the crockpot to allow the balsamic to tenderize the chicken and maximize my activities throughout the day and still have a delicious dinner on the table. The next decision was how to achieve the traditional taco seasonings, a quick check in the pantry yielded a taco seasoning packet: perfection. These two differing flavors bring out distinct spices to ramp up traditional taco chicken to soo much more.

This Slow Cooker Balsamic Taco Chicken is the perfect simple and flavorful taco meat!
- 2 lbs chicken breasts
- 3/4 cups tomato sauce
- 2 tbsp tomato paste
- 1/2 cup balsamic vinegar
- 1 packet taco seasoning*
- 1 tsp salt
- Place the chicken into a slow cooker.
- In a bowl or pyrex measuring cup, combine tomato sauce, tomato paste, balsamic vinegar, taco seasoning & salt and whisk to combine.
- Pour mixture over the chicken and stir to coat.
- Cook on high or 3-4 hours or on low for 6 hours.
- Shred with 2 forks and stir with sauce.

- You can use frozen chicken breasts too!
