Taco night is always the best night of the week and making the meat in a slow cooker makes it even better! With minimal ingredients this slow cooker balsamic taco chicken basically says the whole list in the name. It of course has balsamic vinegar, taco seasoning, some tomato sauce and chicken! You just throw all of that in your slow cooker and cook it for a few hours for the most tender and delicious taco chicken. I have a big issue with any taco meat that is dry and doesn’t have much flavor. This chicken is coated in sauce so you get tons of moist flavor with every bite. The meat goes great on a taco bowl too or even in a quesedilla! If you love balsamic vinegar, chances are you will love the tang it brings to this taco chicken. The recipe is also versitile and can be made in the instant pot very quickly!

Ingredient Information

  • Chicken breasts – if you prefer thighs, those work too!
  • Tomato sauce – this is in a can in the canned tomato section at the store.
  • Tomato paste – helps to thicken the sauce, i love getting it in the squeeze tube.
  • Taco seasoning – use your favorite brand for this! We love the Siete brand.
  • Salt – always needed to bring out all the amazing flavor.

Step by Step Instructions

  • Place the chicken breasts in your slow cooker.
  • Combine the balsamic vinegar, tomato sauce, tomato paste and taco seasoning into a bowl or pyrex measuring cup and stir to combine.
  • Add that mixture all over the chicken and toss to combine.
  • Let it slow cook for a few hours then shred the chicken.
  • Enjoy in tacos!

  • Do not worry if you forgot to pull the frozen chicken out, this recipe can be made with frozen or thawed chicken!

Slow Cooker Balsamic Taco Chicken

This Slow Cooker Balsamic Taco Chicken is the perfect simple and flavorful taco meat!

Ingredients 

  • 2 lbs chicken breasts
  • ¾ cups tomato sauce
  • 2 tbsp tomato paste
  • ½ cup balsamic vinegar
  • 1 packet taco seasoning*
  • 1 tsp salt

Instructions 

  • Place the chicken into a slow cooker.
  • In a bowl or pyrex measuring cup, combine tomato sauce, tomato paste, balsamic vinegar, taco seasoning & salt and whisk to combine.
  • Pour mixture over the chicken and stir to coat.
  • Cook on high or 3-4 hours or on low for 6 hours.
  • Shred with 2 forks and stir with sauce.

Notes

  • *any taco seasoning you like, I love Siete!
  • You can use frozen chicken breasts too!
