Ingredient List

  • Olive Oil– or your favorite oil will work great
  • Sweet Italian Sausage– use your favorite sausage for this recipe
  • Garlic
  • Bell Peppers– any color bell peppers will work
  • Onion
  • Orzo
  • Low Sodium Chicken Stock
  • Full Fat Canned Coconut Milk– make sure you use full fat coconut milk
  • Coconut Aminos– soy sauce can also be used
  • Salt and Black Pepper
  • Parmesan Cheese– fresh grated is the best

Step By Step

  1. Drizzle olive oil in a large skillet over medium-high heat and cook the sausage until browned and cooked through, about 6 to 7 minutes, then set aside.
  2. Add in the bell peppers, to the pan and cook for 5 minutes, then add in onions and cook for another 10 minutes. Add in minced garlic and sauté for about 30 seconds, until fragrant, being careful not to burn it.
  3. Chop then add back in the sausage.
  4. Add in the dry orzo and toast in the pan along with the chicken sausage and garlic for about 60 seconds. Pour in the chicken broth to deglaze the pan then add in the coconut milk, coconut aminos, salt & pepper.
  5. Bring the orzo mixture to a boil then turn the heat down, cover and let the orzo simmer for 10 to 12 minutes, making sure to stir occasionally so that the orzo doesn’t stick to the bottom of the pan. Orzo is ready once it is tender and most of the liquid has been absorbed.
  6. Mix in parmesan cheese. Taste and season with salt to taste.

Pro Tip

  • If you want to kick this recipe up a notch swap out sweet Italian sausage for hot Italian sausage and add red pepper flakes when you cook down the onion and garlic. Feel free to also add chili paste to really give it some depth.

Can I use something else other than orzo?

  • If you do not want to use Orzo there are a few other options you can use. White rice, pearl couscous, brown rice or fregola pasta can all be used instead of orzo for your skillet dinner. Just be sure to check the cooking instructions to make sure you cook it accordingly!

Ingredients 

  • 1 tbsp olive oil
  • 16 oz sweet italian sausage
  • 6 cloves garlic, minced
  • 2 bell peppers, sliced
  • ½ yellow onion, sliced
  • 1 cup orzo, dry
  • 2 cups low sodium chicken broth
  • ¼ cup full-fat canned coconut milk
  • 1 tbsp coconut aminos
  • ½ tsp black pepper
  • ¼ tsp salt
  • ½ cup freshly grated parmesan cheese

Instructions
