The time has come where every afternoon sounds like the perfect time to enjoy a cup of tea and a slice of Perfect Pumpkin Spice Protein Loaf. After years of obsessing over the pumpkin loaf at Starbucks I decided it was high time I created a healthier and high protein option to have on the blog. Not only is pumpkin delicious and such an easy ingredient to add to lots of recipes, it’s also rich in vitamins, mineral and antioxidants all things we can all use a few extra doses of these days. This loaf comes together extremely easy you will be whipping it multiple times a week.

Ingredient List

  • Eggs
  • Coconut Oil– make sure its melted
  • Cottage Cheese– low fat or full fat works great
  • Vanilla Extract
  • Almond Milk– regular cow’s milk works as well
  • Canned Pumpkin– make sure its pure pumpkin and not pumpkin pie mix
  • Flour– this recipe is created with regular white flour
  • Vanilla Protein Powder
  • Baking Powder
  • Salt
  • Pumpkin Pie Spice– homemade or store bought is fine
  • Coconut Sugar
  • Powder Sugar
  • Cinnamon Sugar– just combine cinnamon and sugar

Step By Step

  1. In a bowl, whisk together flour, protein powder, baking powder, salt, pumpkin pie spice, and coconut sugar.
  2. In a small blender, blend eggs, coconut oil, cottage cheese, vanilla extract, almond milk, and pumpkin until smooth.
  3. Pour the blended liquid into the dry ingredients and stir to combine.
  4. Line a loaf pan with parchment paper and pour the batter into the pan, bake for 50 minutes, then let the loaf cool.

Pumpkin Spice Protein Loaf

Ingredients 

  • 2 eggs
  • ¼ cup melted coconut oil
  • ½ cup cottage cheese
  • 1 tbsp vanilla extract
  • ¼ cup almond milk
  • ¼ cup canned pumpkin
  • 1 ½ cups flour
  • ¾ cup vanilla protein powder
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp pumpkin pie spice
  • ¾ cup coconut sugar

Optional Topping:

  • 1 cup powdered sugar
  • 3 tbsp milk
  • Cinnamon sugar

Instructions 

  • Preheat oven to 350°F.
  • In a bowl, whisk together flour, protein powder, baking powder, salt, pumpkin pie spice, and coconut sugar.
  • In a small blender, blend eggs, coconut oil, cottage cheese, vanilla extract, almond milk, and pumpkin until smooth.
  • Pour the blended liquid into the dry ingredients and stir to combine.
