Preheat oven to 350°F.
In a bowl, whisk together flour, protein powder, baking powder, salt, pumpkin pie spice, and coconut sugar.
In a small blender, blend eggs, coconut oil, cottage cheese, vanilla extract, almond milk, and pumpkin until smooth.
Pour the blended liquid into the dry ingredients and stir to combine.
Line a loaf pan with parchment paper and pour the batter into the pan.
Bake for 50 minutes, then let the loaf cool.
Optional Icing:
Mix powdered sugar and milk, then spread over the cooled loaf. Top with cinnamon sugar if desired.
