Pumpkin Spice Protein Loaf

Ingredients 

  • 2 eggs
  • ¼ cup melted coconut oil
  • ½ cup cottage cheese
  • 1 tbsp vanilla extract
  • ¼ cup almond milk
  • ¼ cup canned pumpkin
  • 1 ½ cups flour
  • ¾ cup vanilla protein powder
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp pumpkin pie spice
  • ¾ cup coconut sugar

Optional Topping:

  • 1 cup powdered sugar
  • 3 tbsp milk
  • Cinnamon sugar

Instructions 

  • Preheat oven to 350°F.
  • In a bowl, whisk together flour, protein powder, baking powder, salt, pumpkin pie spice, and coconut sugar.
  • In a small blender, blend eggs, coconut oil, cottage cheese, vanilla extract, almond milk, and pumpkin until smooth.
  • Pour the blended liquid into the dry ingredients and stir to combine.
  • Line a loaf pan with parchment paper and pour the batter into the pan.
  • Bake for 50 minutes, then let the loaf cool.
  • Optional Icing:
  • Mix powdered sugar and milk, then spread over the cooled loaf. Top with cinnamon sugar if desired.
