Ingredient List
- Red Potato– medium or small red potatoes will be good
- Buttermilk Ranch– you can find buttermilk ranch in the fridge section or make your own with a ranch packet
- Celery– be sure to chop the celery into smaller pieces
- Parsley– make sure you use fresh for this recipe, it will truly make a difference
- Dill
- Red Wine Vinegar
- Pickled Onion
Step By Step
- Cook the Potatoes Just Right: Place the chopped red potatoes in a large pot and cover them with cold, salted water. Bring to a boil and cook until the potatoes are tender but still firm – you should be able to easily pierce them with a fork, about 12-15 minutes. Drain the potatoes well and let them cool slightly. Pro Tip: Starting with cold water helps the potatoes cook evenly.
- Prep the Freshness: While the potatoes are cooling, chop the celery, fresh parsley, and fresh dill.
- Assemble the Magic: In a large bowl, gently combine the slightly cooled potato chunks, chopped celery, parsley, and dill.
- Dress it Up: Pour in the buttermilk ranch dressing and red wine vinegar. Stir gently until all the ingredients are well coated. Taste and adjust seasoning if needed – you might want a pinch more salt or pepper.
- Chill Out (for the Best Flavor): Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together. For the best results, chill for 1-2 hours.
- Garnish and Serve: Just before serving, garnish your Perfect Ranch Potato Salad with tangy pickled onions for an extra layer of flavor and visual appeal.
Pro Tip
- This salad actually tastes even better after the flavors have had a chance to meld in the refrigerator, making it the perfect make-ahead dish for any occasion.
- Add Some Protein: Cooked and crumbled bacon, shredded chicken, or hard-boiled eggs would be delicious additions.
