Get Ready to Roast:

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).
  2. Line two large baking sheets with parchment paper (this helps with easy cleanup!).

  • 1 pound carrots, about 4-5 medium carrots, peeled and cut into similar-sized pieces as the potatoes
  • 8 ounces broccolini, about 1 bunch, trimmed
  • 3 tablespoons avocado oil, or olive oil
  • 2 teaspoons salt
  • ½ teaspoon black pepper

For the Whipped Lemon Goat Cheese:

  • 16 ounces soft goat cheese, softened (take it out of the fridge about 30 minutes before using)
  • 1 cup ricotta cheese
  • 2 tablespoons lemon juice, freshly squeezed is best!
  • 1 teaspoon lemon zest, the yellow part of the lemon peel, grated
  • Salt to taste

For the Finishing Touches:

  • Balsamic glaze, you can buy this pre-made
