- Lemon Cookies– Simple Mills has a great option for a healthy lemon cookie
- Bunny Graham– any shape of graham cracker will work, the bunnies are just so fun
- Pretzels– any size or shape will work
- Crystalized Ginger
- Cashew– either salted or not, which ever is your favorite.
- Butter
- Brown Sugar
- White Sugar
- Ground Ginger
- Creme Almonds– check the candy aisle or the seasonal candy section
Step By Step
- Preheat & Prep: Preheat your oven to 250°F (120°C). Line a large baking sheet with parchment paper.
- Combine Dry Ingredients: In a very large bowl, combine the Rice Chex cereal, crushed lemon cookies, bunny grahams, pretzels, crystallized ginger, and raw cashews.
- Make the Sweet & Spicy Sauce: In a medium saucepan, melt the butter over medium heat. Add the brown sugar and white sugar, stirring until dissolved. Bring to a simmer, and then stir in the ground ginger.
- Coat the Mix: Pour the warm sugar mixture over the cereal mixture, and gently toss until everything is evenly coated.
- Bake: Spread the coated mixture onto the prepared baking sheet. Bake for 1 hour, stirring every 15 minutes to prevent burning and ensure even toasting.
- Cool & Add Almonds: Remove from the oven and let the mix cool completely. Once cooled, add the lemon creme almonds and gently mix.
- Serve & Store: Serve immediately or store in an airtight container for later enjoyment.

- 1 tablespoon ground ginger
- 1 cup lemon creme almonds
Instructions
Prep Your Oven and Pans:
- Preheat your oven to 275°F (135°C).
- Line two baking sheets with parchment paper.
Mix the Dry Ingredients:
- In a large bowl, combine the Rice Chex, crushed lemon cookies, bunny grahams, pretzels, chopped crystallized ginger, and cashews. Mix it all up.
Make the Ginger Sugar:
- In a small bowl, mix the white sugar and ground ginger together. Set it aside.
Make the Sweet Syrup:
- Put the butter in a microwave-safe bowl.
- Microwave on high for about 1.5 minutes, until the butter is melted.
- Add the brown sugar to the melted butter and stir.
- Microwave again for about 1.5 minutes, until it’s bubbly.
- Whisk the butter and brown sugar mixture until it thickens a little, like syrup.
