Oatmeal Chocolate Chip Cookie Dough Bars {Gluten Free}
Happy happy day – it’s time to make some super easy oatmeal chocolate chip cookie dough bars! Quarantine has made me start wanting all the desserts after EVERY meal. So I figured I would make some delicious and decent for you treats that I can have on hand and portion out so I can perfectly fill that craving! I am a huge fan of cookie dough and sometimes I come across recipes called something cookie dough ball or something claiming to be cookie dough flavored but UGH, they never actually taste like cookie dough. So I wanted these to taste exactly like cookies dough, and they do! I made them two days ago and had to get the recipe to you as soon as possible, which is feat when a toddler runs your life. So I hope you make them, fully enjoy them, then comment on this post telling me about it!
Stacks on stacks of goodness!

Hi! Could you sub almond flour for cashew? That’s what I have on hand! Thanks!

Amazing!!
Thank you! So yummy and things we already had on hand

The best!!
This was super easy to make. I had to pulse the gluten free oats for both the quick oat sub and the flour. I also used almond butter because I didn’t have cashew butter. Still delicious and my 5 kids thought so, too!

So great to know!!
I made it tonight but had to modify with what I had on hand, I use peanut butter instead of cashew, I use melted butter instead of ghee and used granulated sugar instead of coconut sugar. It is sooooo good! I don’t think this batch will make it until tomorrow. Yum!
Ah that sounds amazing!

So glad!!
SO delicious and worth the $8 cashew butter! Lol. Topped mine with white chocolate because that’s all I had. Also, the batter is incredible. They’re great because somehow, they’re so rich that I don’t feel like eating more than 1 at a time but they’re still delectable.
