The simplest ideas with the most warm and filling reward, this Mason Jar Warm Winter Salad is my latest addiction. This Mason Jar Warm Winter Salad is the perfect meal prep lunch during the colder months! For many people working from home has become the new norm these days, and most of those people are learning that it can sometimes be tough to get a great lunch in while you are home. Since I started working for myself and developed the blog almost 11 years ago I have gone through all the highs and lows of feeding yourself while you are home alone. I have spent many years trying to figure out the perfect lunch that will fill me up with out making me feel heavy and wanting to take a nap (cannot get tempted to lay down on the couch for a quick snooze.) A salad is usually a solid choice when you need some veggies, protein and relatively quick assembling process. Let me present to you the Mason Jar Warm Winter Salad, the perfect combo of filling salad warmed on the stove to keep you cozy while working. Now you might be thinking “How can I make a warm salad ahead of time?” This is a great questions!!! The best thing about this recipe is that it comes together in a Mason Jar and can be stored in the fridge!!!! This Mason Jar Warm Winter Salad is the perfect meal prep lunch during the colder months! This Mason Jar Warm Winter Salad can be shaken in the mason jar then poured into a bowl and eaten. Or you can be fancy and empty the mason jar into a skillet and mix all together. When warm the winter salad in the skillet it brings all the delicious flavors together while also crisping up the kale and bringing the warmth back to all the veggies. What I also love about this mason jar salad is that everything in the jar that you need for the salad including the dressing. Putting the dressing on the bottom of the jar keeps the greens from getting soggy and while also adding extra flavor to the sweet potatoes. Mason Jar Warm Winter Salad

This Mason Jar Warm Winter Salad is the perfect meal prep lunch during the colder months!


Ingredients

Scale
  • 1 16 oz. bag chopped kale
  • 1/2 tbsp olive oil
  • 2 sweet potatoes, chopped (about 3 cups chopped)
  • 4 tbsp chopped pecans
  • 4 chicken apple sausages, diced
  • 4 tbsp gorgonzola cheese*
  • Dressing:
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp orange juice
  • 1 tbsp dijon mustard
  • 1 tbsp maple syrup
  • Salt and pepper to taste

Instructions

  • Add kale to a large bowl and add in 2 tbsp avocado oil.  Massage the kale to incorporate the oil and to break down the kale a bit.
  • Place chopped sweet potatoes in an air fryer and spray with some oil spray and sprinkle with some salt. Cook at 400 for 10 minutes or until fork tender.
  • Combine all dressing ingredients in a small blender and blend until combined and well seasoned. 
  • Grab 4 32 oz. mason jars. In each mason jar add about 2 tbsp of dressing, followed by 1 tbsp chopped pecans, 1 chopped chicken apple sausage, ½ cup sweet potatoes, gorgonzola cheese, then fill the rest with the massaged kale.
  • Store them in your fridge until you are ready to eat.
  • When ready to enjoy, preheat a pan over medium heat.  Dump the whole jar of ingredients into the pan and cook for about 5 minutes, stirring occasionally, until warmed through.

    1. Have not tried it in the microwave but I think it would work, maybe take the greens out and microwave the other items before tossing with the greens.
