Add kale to a large bowl and add in 2 tbsp avocado oil. Massage the kale to incorporate the oil and to break down the kale a bit.
Place chopped sweet potatoes in an air fryer and spray with some oil spray and sprinkle with some salt. Cook at 400 for 10 minutes or until fork tender.
Combine all dressing ingredients in a small blender and blend until combined and well seasoned.
Grab 4 32 oz. mason jars. In each mason jar add about 2 tbsp of dressing, followed by 1 tbsp chopped pecans, 1 chopped chicken apple sausage, ½ cup sweet potatoes, gorgonzola cheese, then fill the rest with the massaged kale.
Store them in your fridge until you are ready to eat.
When ready to enjoy, preheat a pan over medium heat. Dump the whole jar of ingredients into the pan and cook for about 5 minutes, stirring occasionally, until warmed through.
