Lemon Poppyseed Protein Muffins

Here's a delicious and easy recipe for lemon poppyseed protein muffins that are perfect for a healthy breakfast or snack!

Ingredients 

  • 1 cup flour, all-purpose
  • ½ cup vanilla protein powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup maple syrup
  • 1 egg
  • ¼ cup melted coconut oil
  • cup milk, any kind you like
  • 1 tsp lemon extract
  • 1 tablespoon poppyseed

Instructions 

Get Ready to Bake:

  • Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).

Mix Everything Together:

  • Put all the ingredients (flour, protein powder, baking powder, salt, maple syrup, egg, melted coconut oil, milk, vanilla extract, and poppy seeds) into a big bowl.
  • Stir everything together until it's all mixed well. Don't overmix, just combine everything.

Fill the Muffin Pan:

  • Spray a muffin pan with cooking spray (or use a silicone muffin pan, which is easy!).
  • Fill each muffin cup about ¾ of the way full with the batter.

Bake the Muffins:

  • For mini muffins: Bake for 10-12 minutes.
  • For regular-sized muffins: Bake for about 20 minutes.
  • To check if they're done, stick a toothpick into the center of a muffin. If it comes out clean, they're ready!
  • Cool and Enjoy!
  • Let the muffins cool in the pan for a few minutes before taking them out.

Notes

  • You can use any kind of milk you have on hand.
  • If you don't have coconut oil, you can use melted butter or another neutral oil.
  • Add lemon zest to the batter for even more lemon flavor.
