Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
Mix Everything Together:
Put all the ingredients (flour, protein powder, baking powder, salt, maple syrup, egg, melted coconut oil, milk, vanilla extract, and poppy seeds) into a big bowl.
Stir everything together until it's all mixed well. Don't overmix, just combine everything.
Fill the Muffin Pan:
Spray a muffin pan with cooking spray (or use a silicone muffin pan, which is easy!).
Fill each muffin cup about ¾ of the way full with the batter.
Bake the Muffins:
For mini muffins: Bake for 10-12 minutes.
For regular-sized muffins: Bake for about 20 minutes.
To check if they're done, stick a toothpick into the center of a muffin. If it comes out clean, they're ready!
Cool and Enjoy!
Let the muffins cool in the pan for a few minutes before taking them out.

You can use any kind of milk you have on hand.
If you don't have coconut oil, you can use melted butter or another neutral oil.
Add lemon zest to the batter for even more lemon flavor.
