Chocolate Peppermint Protein Muffins

Move over massive chocolate muffins from Costco and make room for these decadent Chocolate Peppermint Protein Muffins. The kids have been asking for reindeer pancakes and santa waffles and everyone has had their daily amount of sugar by 9am, which calls for an easy and protein filled muffin. These Chocolate Peppermint Protein Muffins are the perfect substitution for these final sugar fueled days before Christmas, when everyone wants all the holiday flavors but we maybe need to add some non sweet treats to the mix. Like all the other mini muffins on the site these come together extremely easily with all the ingredients coming together in a single bowl. Use any size muffins tin or even a loaf pan and you can have these Chocolate Peppermint Protein Muffins on the table with some chopped fruit in no time.

Ingredients
- 1 cup flour
- 1/2 cup vanilla or chocolate protein powder
- 1/4 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup maple syrup
- 1 egg
- 1/4 cup melted coconut oil
- 1/3 cup milk (any milk works)
- 1 tbsp vanilla extract
- 1/2 tsp peppermint extract
- 1/4 cup mini chocolate chips
- Sprinkles (optional)
Instructions
- Preheat oven to 350 degrees.Â
- In a bowl combine all of the ingredients and stir to combine.
- Spray a silicone muffin pan with oil and fill each cup about ¾ of the way.Â
- Bake mini muffins for 14-16 minutes and regular muffins for 22-25 minutes or until cooked through.
