These Chocolate Peppermint Protein Muffins are the perfect substitution for these final sugar fueled days before Christmas, when everyone wants all the holiday flavors but we maybe need to add some non sweet treats to the mix.

- Cocoa Powder– or cacao powder
- Baking Powder

- Maple Syrup– natural maple syrup gives you the best taste
- Egg– you can use applesauce if you want to omit the egg
- Melted Coconut Oil
- Milk– use dairy milk or non dairy
- Vanilla Extract
- Peppermint Extract
- Mini Chocolate Chips– chocolate chunks also works
- Sprinkles

- Combine all ingredients into a large bowl and mix (yup, its that easy.)

Chocolate Peppermint Protein Muffins
Ingredients
- 1 cup flour
- ½ cup vanilla or chocolate protein powder
- ¼ cup cocoa powder
- 1 tsp baking powder
- ½ tsp salt
- ½ cup maple syrup
- 1 egg
- ¼ cup melted coconut oil
- ⅓ cup milk, any milk works
- 1 tbsp vanilla extract
- ½ tsp peppermint extract
- ¼ cup mini chocolate chips
- Sprinkles, optional
Instructions
- Preheat oven to 350 degrees.
- In a bowl combine all of the ingredients and stir to combine.
- Spray a silicone muffin pan with oil and fill each cup about ¾ of the way.
- Bake mini muffins for 14-16 minutes and regular muffins for 22-25 minutes or until cooked through.
