- Spinach– fresh spinach is best in this recipe
- Almond Flour
- Baking Powder
- Salt
- Black Pepper
- Chicken Breakfast Sausage– links or patties can be used
- Chives– these are easiest to chop with kitchen scissors
- Eggs– make sure they are lightly beaten
- Cottage Cheese– any percentage of cottage cheese can be used
- Cheddar Cheese– if you don’t love cheddar cheese feel free to use your favorite cheese
Step By Step
- Place a pan over medium heat and spray with some avocado oil spray, add sweet potato and chopped onion to the pan and cook, stirring occasionally for about 10 minutes or until sweet potato is tender.
- Add in spinach and cook for about 30 seconds just to wilt slightly.
- While veggies are cooking, in a large bowl combine almond flour, baking powder, salt and pepper and whisk to combine.
- Transfer veggies to the large bowl and add in chicken sausage and chives.
- In a blender combine eggs and cottage cheese and blend to break down the cottage cheese.
