High Protein Sweet Potato & Chicken Sausage Egg Bites

Ingredients 

  • 2 cups shredded sweet potato
  • 1 yellow onion, chopped
  • 1 cup spinach, chopped
  • 1 ½ cups almond flour
  • 1 tsp baking powder
  • 1 tsp salt
  • ¼ tsp black pepper
  • 5 oz chicken breakfast sausage
  • ¼ cup chopped chives
  • 4 eggs, lightly beaten
  • ½ cup cottage cheese
  • 1 cup shredded cheddar cheese, divided

Instructions 

  • Preheat the oven to 375 degrees.
  • Place a pan over medium heat and spray with some avocado oil spray, add sweet potato and chopped onion to the pan and cook, stirring occasionally for about 10 minutes or until sweet potato is tender.
  • Add in spinach and cook for about 30 seconds just to wilt slightly.
  • While veggies are cooking, in a large bowl combine almond flour, baking powder, salt and pepper and whisk to combine.
  • Transfer veggies to the large bowl and add in chicken sausage and chives.
  • In a blender combine eggs and cottage cheese and blend to break down the cottage cheese.
  • Pour egg mixture into the bowl and toss everything together to combine.
  • Add in ¾ cup shredded cheddar cheese and stir to combine.
  • Scoop mixture into a muffin pan sprayed with avocado oil and top with remaining cheese.
  • Bake for 20-25 minutes or until they are cooked through.
