This Gingerbread Protein Oat Bake is packed with delicious warm spices, protein, carbs and just a touch of sweetness, everyone in the house will be asking for seconds. I have always loved making oat bakes because they are easily adapted to different flavor profiles and the kids usually always devour them.
This oat bake has protein coming from the oatmeal, protein powder and cottage cheese, sweetness coming from the maple syrup and vanilla extract and the flavor profile from all the warm spices that make up the gingerbread flavor. The glaze on top is a simple mixture of powder sugar and orange juice with orange zest, just to give a fancy top and really pump up the breakfast game. Ingredient List
- Egg
- Cottage Cheese
- Milk– any percentage will work, even oat or almond can be used
- Vanilla Extract
- Quick Oats
- Vanilla Protein Powder– your favorite type will work great
- Baking Powder– this is different from baking soda, make sure and check your labels
- Salt
- Ginger
- Cinnamon
- Nutmeg
- Cloves
- Maple Syrup– I prefer natural maple syrup for baking recipes
- Coconut Oil– Make sure its melted but cooled
- Confectioners Sugar– or called powder sugar
- Orange Juice
- Orange Zest– zest before you juice and you just need one orange
Step By Step
- Preheat oven to 350 degrees.
- In a small blender combine egg, cottage cheese, milk and vanilla extract and blend until smooth.
- In a large bowl combine quick oats, vanilla protein powder, salt, ginger, cinnamon, nutmeg and cloves.
- Pour the cottage cheese mixture into the dry ingredients as well as maple syrup and coconut oil and stir until combined.
- Spray a square baking pan with oil and pour mixture into pan, Bake for 20 minutes.
- Once the oat bake is cooled, make the icing.
- In a small bowl combine confectioners sugar, orange juice & orange zest and stir to combine. Drizzle over the oat bake.

- Old fashion oats can easily be made into quick oat with a quick blitz in the food processor or ninja blender!

- YES, a loaf cake can easily be made into muffins and vice versa. You should always bake your muffins at 350 degrees. Start at 12 minutes and add a few minutes at a time until cooked through.

- ¾ cup vanilla protein powder
- 1 tsp baking powder
- ½ tsp salt
- 2 tsp ground ginger
- 2 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp ground cloves
- ½ cup maple syrup
- ¼ cup melted coconut oil
Orange Glaze:
- ¾ cups confectioners sugar
- 2 tbsp orange juice
- 1 tsp orange zest

- *If you only have old fashioned oats, place them in a blender or food processor and pulse them to chop them slightly to make quick oats.
