Gingerbread Protein Oat Bake

Decadent Gingerbread Protein Oat Bake: Fuel your day with a guilt-free treat. Packed with protein, fiber, and holiday flavor.

Ingredients 

  • 1 egg
  • cup cottage cheese
  • ¼ cup milk
  • 1 tbsp vanilla extract
  • 1 ½ cups quick oats*
  • ¾ cup vanilla protein powder
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 tsp ground ginger
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground cloves
  • ½ cup maple syrup
  • ¼ cup melted coconut oil

Orange Glaze:

  • ¾ cups confectioners sugar
  • 2 tbsp orange juice
  • 1 tsp orange zest

Instructions 

  • Preheat oven to 350 degrees.
  • In a small blender combine egg, cottage cheese, milk and vanilla extract and blend until smooth.
  • In a large bowl combine quick oats, vanilla protein powder, salt, ginger, cinnamon, nutmeg and cloves.
  • Pour the cottage cheese mixture into the dry ingredients as well as maple syrup and coconut oil and stir until combined.
  • Spray a square baking pan with oil and pour mixture into pan.
  • Bake for 20 minutes.
  • Once the oat bake is cooled, make the icing.
  • In a small bowl combine confectioners sugar, orange juice & orange zest and stir to combine. Drizzle over the oat bake.

Notes

  • *If you only have old fashioned oats, place them in a blender or food processor and pulse them to chop them slightly to make quick oats.
