Apple Spice Breakfast Bread

Time for another Breakfast Bread recipe! Last time I made a Pumpkin Oat option and this time its all about Apple Spice. I love making breakfast bread on a Sunday, slicing it into pieces and storing it in the fridge to enjoy all week long. There is sugar in this bread but it isn’t super sweet which makes it perfect for the morning and for kiddos. Ruth loves this stuff! Her breakfast of choice (although she has no choice in the matter) has been this apple spice breakfast bread and a banana every morning. Because this mama is tired in the morning and ruth needs food RIGHT when she wakes up!
I also loved adding some real pieces of apple into this bread to vary the texture for her a little bit. I just love the little eater she has become – she loves food and is pretty open to at least trying most things. The fall season (even though its still 80 degrees here) makes me want to bake at least twice a week! Lighting a candle and mixing up something delicious is just about the most therapeutic thing for me. So i hope you feel the same way and enjoy this breakfast bread!
Smothering it in peanut butter is also recommended!

Apple Spice Breakfast Bread
Ingredients
- 1 cup quick oats
- 1 cup almond flour
- ½ tsp salt
- ½ tsp baking soda
- ½ tsp baking powder
- 2 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp allspice
- 3 eggs
- ⅓ cup unsweetened applesauce
- 1 tsp vanilla
- ¼ cup melted ghee or grass-fed butter
- ⅓ cup coconut sugar
- ½ cup chopped & peeled granny smith apple
Instructions
- Preheat oven to 350 degrees.
- Combine all ingredients in a bowl and then pour into a parchment lined loaf pan.
- Bake for 30-35 or until it doesn’t look soft at all on top.
I made these into muffins (22 min bake time) and they were a hit! Great on the go and they freeze perfectly! Love these!!!
