Banana Prune Oatmeal Bake
Ingredients
Scale
- 2 and 1/4 cups Bob’s Red Mill Old Fashioned Rolled Oats
- 2 tablespoons flax meal (ground flax seeds)
- 1 tablespoon chia seeds
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup ripe mashed bananas (about 2 large bananas or 3 medium bananas)
- 3/4 cup almond milk
- 1/4 cup maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 2 prunes, chopped
Instructions
- Combine all ingredients in a bowl and pour into a square pyrex dish that has been lightly oiled.
- Bake at 350 degrees for about 35 minutes.
Great recipe! Made it for my 9 month old and she loved it! I didn’t have almond milk so I used oat milk instead and skipped the maple syrup. Thanks for a delicious and baby-friendly recipe!

Love this recipe! So versatile as you can swap for what you have on hand and it always turns out delish. My 15 month old loves them! Great to have in a freezer stash as well- I always make a double batch.

What can I substitute for Chia? I don’t have any and the kids are asleep can’t run to store!!!
You can just omit it!!
Love this recipe! Quick, easy, delicious! My almost four year and I both devoured almost the whole dish. I added a drizzle of syrup when it was still warm. Heaven!

Such an easy recipe. Made these for my 3yo and added a few chocolate chips on top. And I modified the recipe, leaving out the maple syrup and blending the banana/prunes together, so my 6mo twins could have for BLW. (Also, added in a little almond flour for a nut exposure). Will definitely add this recipe to my recipe binder. Also love that the prunes can help keep everyone regular!

My whole family LOVES this… I just made it for the second time, and subbed choc chips in for prunes. Such a great way to sneak chia and flax into the little ones diets!

I’m assuming you store this in the fridge when you eat it over the course of the week? I plan to freeze some too, but I wasn’t sure if people were leaving it on the counter or fridge for the short term.
Yes, fridge is best
These are a weekly staple! So delicious. We add whatever extra fruit we have and switch it up. We freeze the leftovers. The kids heat them up add some milk and it’s delicious oatmeal ready to go.

My husband was having constipation issues, so I googled some breakfast treats with prunes and found this recipe. I added 2 more cut up prunes. I think I might add pumpkin seeds, walnuts and cranberries to it next time! :0) We have organic chickens (farm fresh eggs), so I thought this would be a good recipe to have with fresh eggs in the morning! Thanks for the recipe…very versatile recipe to have on hand.
