Strawberry & White Bean Chopped Salad

Ingredients 

Salad

  • 2 large chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 head of romaine lettuce
  • 1 cup white beans, rinsed
  • 2 cups chopped strawberries
  • ½ red onion, chopped
  • ½ cup pecans, chopped
  • ¼ cup crumbled goat cheese

Dressing:

  • ¼ cup olive oil
  • ¼ cup balsamic vinegar
  • 1 tbsp dijon mustard
  • 1 tbsp honey
  • ½ tsp garlic powder
  • Salt to taste

Instructions 

  • Place chicken breasts in a large zip lock bag and use a meat mallet to make them all an even width.
  • Then add in 2 tbsp olive oil and 2 tbsp balsamic vinegar to the bag, zip it up and shake it around to coat the chicken. Let marinate for at least 30 minutes.
  • Grill the chicken until cooked through (165 degrees inside) and set aside.
  • Take your romaine, chop it thoroughly and add to a large bowl.
  • Add in beans,strawberries, red onion, pecans and goat cheese.
  • In a mason jar combine all of the dressing ingredients and shake to combine.
  • Chop the chicken and add to the bowl along with the dressing. Toss to combine!
