Rosemary Braised Beef w/ Garlic Balsamic Cauliflower Rice

So I was originally going to post a different recipe today, but when I made this yesterday, I HAD to share it with you immediately. I also am now wondering why I don’t braise beef at least once a week. I think it could become a Sunday tradition, at least during Whole30! Because of course this is whole30 approved. It is really the principle of this way of braising that I want to do more often with all kinds of meat. As you can see in the photo below, first you coat the meat with a spice rub, then pour a sauce over the top! I made this sauce by throwing some fire roasted tomatoes, balsamic vinegar, garlic & a few dates in a blender. So simple and when it roasts and combines with the spices on the meat, it becomes a flavor explosion! I also decided to serve this over cauliflower rice which I love to make!! You can really add any seasonings to riced cauliflower and chances are it will taste great. Most people make cauliflower rice by just throwing it in a food processor until it is in little bits. But I think the best way is to use the grater attachment on the food processor! Then you get longer strands that really seem like rice. Okay enough chatter about this amazing recipe… try it for yourself!

Rosemary Braised Beef w/ Garlic Balsamic Cauliflower Rice
Ingredients
rosemary braised beef:
- 1 ½ pounds beef stew meat, mine were about 1 1/2 inch cubed chunks
- 1 tablespoon salt
- 1 tablespoon rosemary, minced
- 1 ½ tablespoons garlic powder
- 1 heaped teaspoon ground sage
- 1 teaspoon paprika
- 1 cup fire roasted chopped tomatoes, canned
- ¼ cup balsamic vinegar
- 4 cloves of garlic, chopped
- 3 pitted dates
garlic balsamic cauliflower rice:
- 1 head of cauliflower
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 tablespoon balsamic vinegar
- 1 teaspoon parsley, dried or fresh
Instructions
rosemary-braised-beef:
- Preheat the oven to 300 degrees. Cover a sheet pan with foil and place beef on the pan. In a small bowl combine salt, rosemary, garlic powder, sage & paprika. Pour spice mix over beef and press it into and all over the meat. Once each piece is coating you can discard the rest of the spice mix if there is extra. Set aside. In a blender, combine tomatoes, balsamic vinegar, garlic & dates. Blend for about 20 seconds. Pour mixture over the meat until evenly coated. Cover the pan with foil so it is completely covered. Place in the oven and cook for about an hour and a half. Once cooked, remove beef from pan and into a bowl. Pour remaining sauce from the pan over the meat and toss to coat.
cauliflower rice:
- Chop cauliflower into pieces and run through the grater attachment of your food processor. In a large skillet, pour olive oil over medium-high heat. Once oil is hot, add cauliflower to the pan and cook for about 8-10 minutes, stirring occasionally. Once cauliflower is cooked, add garlic powder, salt balsamic vinegar and parsley to the pan and stir to combine.
- Serve beef over the cauliflower rice for a delicious and healthy meal!

Made this dish recently and the flavors were great. However, it was extremely salty. It was borderline inedible. Are you sure 3Tablespoons of salt is needed for the Beef, in addition to the dish? I’m excited to make the dish next time with less salt. Thanks.
Oh shoot! Mine was perfect but I do like things salty. I also didn’t pour over all of the spice mix, just coated each piece with it. Thank you for pointing that out so I can modify the recipe a bit!!

How many servings does this make?
For us it was enough for dinner for 2 with leftovers for lunch so I would say 4 servings!
Firstly, we wanted to share that everyone we’ve shared this meal with has LOVED it.
Is it possible to transfer this recipe to a crockpot method? I am NOT a well versed cook, and so I was hoping you could recommend.
