What Makes This Recipe Great
This recipe was long overdue for me to create, especially when I always have a half bag of fresh cranberries in the fridge after Thanksgiving. Like many Cranberry Orange loafs this has the classic of cranberries, orange zest and juice and vanilla, but I also always love have extra protein in any baked good I make. This Protein Cranberry Orange Loaf does not disappoint and has protein from 4 different sources, which is amazing. The largest protein kick comes from cottage cheese with a whopping 13 grams, then you get protein from protein powder, egg and milk. I love when I can combine complex protein from a protein powder with simple proteins from an egg and milk. This loaf will be perfect for a slow morning when the kids are home and you need a good activity. If you haven’t baked with kids before I promise it will be messy but soo worth it in the end, and the kids are more likely to each the creation they have helped bake. Ingredient Information
- Egg– be sure its room temp and not right out of the fridge
- Cottage Cheese
- Milk– any milk alternative will work as well
- Vanilla Extract
- Flour– you can use a one for one flour if you prefer
- Vanilla Protein Powder- Flav City has my all time favorite protein powder
- Baking Powder
- Salt
- Maple Syrup
- Coconut Oil– make sure its melted and cooled before adding
- Orange– be sure and zest before juicing
- Cranberries– fresh or frozen will work
- Confectioners Sugar– also goes by the name powder sugar
Step By Step
- Pre heat oven to 350 degrees. In a small blender combine egg, cottage cheese, milk and vanilla extract and blend until smooth.
- In a large bowl combine flour, vanilla protein powder, baking powder and salt.
- Pour the cottage cheese mixture into the dry ingredients as well as maple syrup and melted coconut oil and stir until combined.
- Add in juice of half an orange, orange zest and cranberries and fold in to combine.
- Spray a loaf pan with oil and line with parchment paper, then pour mixture into pan.
- Bake for 35 minutes or until lightly browned on top.
- Once the loaf is cooled, make the icing.
- In a small bowl combine confectioners sugar, orange juice & orange zest and stir to combine. Drizzle over the loaf.

- 1 egg

- 1 tbsp vanilla extract
- 1 ½ cups flour
- ¾ cup vanilla protein powder
- 1 tsp baking powder
- ½ tsp salt
- ½ cup maple syrup
- ¼ cup melted coconut oil
- Juice of ½ an orange
- 2 tsp orange zest
- 1 cup cranberries
Icing:
- 1 ½ cups confectioners sugar
- ¼ cup orange juice
- 1 tsp orange zest
Instructions

Hi! I tried this recipe this morning and my dough was SOOOOO sticky so I kept adding milk and orange juice to thin it out. When I was cleaning up though I realized I never used the baking powder? It doesn’t say in the recipe directions where to add that in?
