Protein Cranberry Orange Loaf

A healthy and delicious treat! This Protein Cranberry Orange Loaf is packed with flavor and nutrients, perfect for breakfast or a snack.

Ingredients 

  • 1 egg
  • cup cottage cheese
  • ¼ cup milk
  • 1 tbsp vanilla extract
  • 1 ½ cups flour
  • ¾ cup vanilla protein powder
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup maple syrup
  • ¼ cup melted coconut oil
  • Juice of ½ an orange
  • 2 tsp orange zest
  • 1 cup cranberries

Icing:

  • 1 ½ cups confectioners sugar
  • ¼ cup orange juice
  • 1 tsp orange zest

Instructions 

  • Preheat oven to 350 degrees.
  • In a small blender combine egg, cottage cheese, milk and vanilla extract and blend until smooth.
  • In a large bowl combine flour, vanilla protein powder and salt.
  • Pour the cottage cheese mixture into the dry ingredients as well as maple syrup and melted coconut oil and stir until combined.
  • Add in juice of half an orange, orange zest and cranberries and fold in to combine.
  • Spray a loaf pan with oil and line with parchment paper, then pour mixture into pan.
  • Bake for 35 minutes or until lightly browned on top.
  • Once the loaf is cooled, make the icing.
  • In a small bowl combine confectioners sugar, orange juice & orange zest and stir to combine. Drizzle over the loaf.
